My most difficult task is making anything with yeast dough.

Strange as it may seem, I can prepare gourmet meals, but no matter what I do, I can't make a Rice Crispy treat (that doesn't require a chisel to rmove from the pan) to save my soul...

I can never get Spanish rice to come out anywhere close to good. I'm also not very handy with yeast bread baked in loaf pans - just never seems to rise much. (But now I have no-knead bread, which is pretty much foolproof!)

Pudding/custard from scratch. I always add too much cornstarch/turn the temperature up too high/cook the eggs/let it sit on the heat too long. Ah well! It's amazing how much overcooked pudding is like rubber.

Deep frying. I can do it, mind you, but it's a pain in the butt.

Right now, making my own frozen sorbets at home. Last three attempts have been flops. I am blaming the less-then-high end ice cream maker my mother bought me last Christmas (mostly because it can't talk back!)

My most difficult task is getting dinner STARTED. When I get home from work, I'm tired. I sit on the couch and read the paper for a little while. Then I have to force myself up off the couch and into the kitchen. If I'm lucky, towards the end of the week I can just tell everyone to help themselves to leftovers!

Working in any sort of a timely manner. That includes not sensibly anticipating how long something will take, which leads to me starting to bake the most complicated (but delicious!) cupcake recipe ever at 10:30 p.m., after a long day of work. =)

I'm not much of a baker. I don't really eat dessert, and if I have to knead dough, I have to clear off a busy counter, and even then I get flour all over my life.

Making thick, creamy frosting that doesn't "melt" using agave nectar instead of sugar. I'm working on it, though.

Two things that give me fits... Consistant results with simple steamed rice. Yes, I know that almost everyone now has a rice steamer and it is almost impossible to screw it up but I'm not too keen on single use appliances. On top of that I know that I buy the least expensive rice available and if I was better at shopping I'd have a better end product too but I'm sometimes too frugal...
Secondly, I find it tedious, and thankless to spend time making a big "tossed" salad. Everyone I share the table with has their preferred ingredients as well as those they won't touch at all. Can't please everybody all of the time... On top of that I have lower standards of what constitutes clean produce. It's easier to do the laundry than to get the lettuce clean to some people's requirements. I pass and let someone else suffer that grief while I cook something rewarding...

Ganache seems to be my downfall everytime I attempt it... it ALWAYS breaks! I'm bound and determined though, so I keep trying. I know it should be easy, but for some reason, i just can't do it.

caribbean style rice and beans no matter how many times people give me advice or even if i follow a recipe...and for the life of me asian noodles like pad thai...

...trying to make it to serving time without getting full. I tend to nibble...

Gnocchi. End of story.

I spent twent grand on culinary schoool, can make demiglace and souffles in my sleep, but I still incinerate toast.

I go round and round with pie dough, I have been known to just toss it at the cupboards when it is not going well. Which really sucks b/c my mom can make it in her sleep! Some day I may get to that level but right now I would be happy if it turned out light and crispy.

Peeling chestnuts. I've sustained many an injury completing that task before Thanksgiving. Occasionally I find them peeled and in vacuumed bottles or packages, and that's worth giving thanks for.

burgers. No matter what temperature, size, amount of greasing I use, I always manage to cook them into black rocks that are raw in the inside. And I fail at muffins, scones and sponge cakes. Basically any baked good that requires a light hand. (I am not even going to attempt a souffle)

cannoli shells

I can make insanely flaky pie crusts and hand rolled pasta, but I can't for the life of me make a decent omelet. Thank god my boyfriend makes awesome ones!
