If you could only have one knife...

I'm sure you are like me and love knives and chuckle a bit when you go to a friends home who has inferior knives when your making something in their kitchen. If you could only have one knife from here on out which would you choose and why?

An 8 inch chef's knife. Works for almost everything, except slicing cheese, ripe tomatoes and bread.

My Henckels Santoku, I keep it razor sharp and often use it as a paring knife to save the putting down and picking up the the other knife! Works for everything.

I second the Henckels Santoku. I have a whole set of Henckels and I have a Santouku (that I primarily use), but I don't have a Henckels Santouku and I covet it.

Henckels 8 inch chef's knife, LOVE it, use it for just about everything.

f dick offset serrated bread/utility 7 inch with the divet handle not the molded one.
I use this 99% of the time for everything.
Every chef that works for me usually gets one within a week because they are so handy and cheap.

As a height challenged person, I find most knives a bit heavy and unbalanced, but I had hubby make me a knife, it is basically triangular, short (natch), and has a way cool handle that I can actually get my hand around. The blade has a bit of a curve and I use it for almost everything except for veggies. A good friend sent me a very anonymous Chinese thin bladed knife (also sort of small) with a smallish handle, cuts like a maniac. My two faves, if the house was on fire......holler for hubby, shoo the two dogs out and grab the two knives.

I also vote for the Henckels Santoku. I take it with me when I am cooking at my boyfriend's or parents' house - they have bad knives and I simply cannot use them!

The 8" chef (Global) and the Santoku(Wustoff)......I really want to try the Ken Onion Shun chef knife.....might treat myself to it!!!!! Anyone have any comments about that knife??

My dad's butcher knife. My parents gave it to me when I moved into my apartment. It is all notched and dented and heavy and not very pretty, but it will slice through anything. I have a knife block, but none of the knives cut the way his does.

I'm a little surprised at the good comments re Henckels. I have an expensive set of Henckels and I don't think they're worth the money. I find them difficult to sharpen and difficult to keep sharpened. I wiah now I'd have bought Wustof.

Another vote here for the Henckels Santoku. I've even brought it with me to my in-laws when my wife and I are going there for dinner...because everyone usually gets asked to pitch in a bit.

Henkels 8in Twin Cusine Chef's Knife. I love it's weight. Pair that with my Chantry knife sharpener and I am good to go!

Hard choice.

Either my Victorinox 8" chef's knife, or my Wustofff Santoku.
