Lately I've been going with a faux Italian vibe, and using olive oil, basalmic vinegar, basil, garlic, red pepper flakes, salt, and pepper.
The other recent fave is baking and smoking the potatoes along with beer-can chicken.

In London, a jacket potato topped with an amazing array of toppings is the cheap lunch of choice. My favourite is tuna salad and cheese - although in Canada getting a baked potato with broccoli and cheese sauce is a favourite as well.

Either with baked beans (always Heinz) and grated cheese, or with tuna mayonnaise and salad. Although last night we had some with lentil salad and raita, and that was good too.

Mmmm...I like my baked potato with LOADDDS of sour cream. Otherwise, I do like the occasional broccoli and cheddar potato.
