Gun to your head: 3 Favorite Sauces...

If you could only have 3 sauces to eat for the rest of your life which 3 would you pick and why?
*note the gun part was only to attract your attention :)

Pesto. Bechamel. Fire-roasted tomato.

From Aerosmith's Joe Perry's Rock Your World, both his Boneyard Brew hot sauce and his milder Mango Peach Tango, plus Sweet Baby Ray's original BBQ sauce. Between those three, I'll sauce about anything on a plate.

A good German stone-ground mustard, a nice creamy mayo, and an olive oil and truffle vinaigrette.

Oh, since I'm from the south, I'd do whatever it takes to also have a good gravy for biscuits.

Hollandaise. My mother in-laws red chili sauce. Chipotle Tabasco.

Beurre blanc, homemade barbecue, and green chile sauces.

Tabasco Soy Sauce, Garlic Cream Sauce, Buckeye Hot BBQ Sauce...
(Only 3?! That could lead to a lifetime of regrets....)

Aioli, pesto & sweet chili sauce.
Though one wonders: jam probably doesn't count as a sauce, but what about chutney? At one point does a dip/marinade/spread become a sauce?

Hot fudge, caramel & butterscotch!

Demi glace, demi glace and demi glace!

Gun to my head, I might try to negotiate nine ingredients instead of three sauces. That way I could mix and match. Maybe: demi-glace (thanks Jon Foxx), wine--red and white (is that one or two ingredients?), cream, butter, basil, olive oil, tomatoes, chicken broth.( Onions, celery, garlic, peppers, and carrots shouldn't count as ingredients since they're veggies. And cheese is, of course, cheese---clearly that doesn't count.)
By the end of my sauce deconstruction negotiations, the gun-wielding sauce fanatic will have either pulled the trigger or headed for the kitchen!

pesto, hot fudge, spicy tomato sauce.

bearnaise, bearnaise, and bearnaise

Miso paste (not exactly a sauce but I've definitely used it as such), oyster sauce, and tomato-vodka sauce.

Hollandaise, a good gravy, and Thai sweet chili sauce.

Peppa Royale, Wild Pepper's Red Savina Garlic Sauce, and Toad Sweat (Hot Sauce for Ice Cream).

Hmmmmmmmmmmmmmmmmm...
simple vinaigrette, Thai sweet & sour chili sauce, mushroom sauce (i cheated because I'd take both bechamel and gravy)

And for dessert, (it's not a sauce, is it??).. butterscotch/caramel (couldn't tell the difference), chocolate and vanilla..
