Good simple recipe for summertime fennel salad?

Epicurious just ain't doing it for me--Anybody have a good recipe for a simple fennel salad? Alas I do not own a mandolin slicer...

a classic is sliced fennel, orange segments, and ground black pepper - add some sharp pecorino or caccio cheese shavings to really elevate, but it's delicious cheese-free - dress with evoo and a couple drops of red vinegar of your choice (balsamico, red wine, your call) - desert island salad top 10 for sure

All you need is a sharp knife . . . sliced fennel, Belgian endive, diced tomato, and avocado. I make a dressing with 2 parts evoo, 1 part white wine, 1 part half & half, a couple spoons of Dijon mustard, and salt and pepper (thank you Mollie Katzen!). Some crab meat is good in this. If you have some steamed asparagus throw that in too. Hey, now I think I have to go to the market!

sorry what is "evoo"?

evoo = extra virgin olive oil : )
I wouldn't have known that a year ago

i like using grapefruit instead of orange slices, that's yummy too

A sharp knife will do fine/ Slice it as thin as you can and toss it with shards of Parmesan and a lemon-chive vinaigrette. Save some of the fronds for garnish.

I usually just sprinkle thinly sliced fennel with coarse salt and marinate in a bit of lemon or yuzu juice for a few hours in the refrigerator. It's surprisingly refreshing with almost no work.
