Fresh Mint!

A friend gave me some mint plants! I am now dying to try a ice cream recipe, but have found recipes on the net that call for artificial extract and food colouring. I'm not up for that. I want a custardy recipe that calls for real mint. Anyone have one that they care to share???

In David Lebovitz's book "The Perfect Scoop," there is a recipe for Fresh Mint Ice Cream on Page 99.

I also grow mint, and have not been very good about incorporating it into my culinary repertoire. What's your favorite mint recipe, sweet or non? Anyone made a good mint pesto? What are some unexpected ways I might use my mint?

bylime, I randomly picked up some mint the other day and have been surprised how many times I've used it. It paired really well with some fresh english peas - cooked in a bit of butter with some spring onion, I tossed the mint in for the last few seconds on the heat. I also tossed it with watermelon chunks and some salt & pepper. It just got better the longer I left it, the mint gave the watermelon a great fresh/herby flavor. Lastly, I threw it in a salad with whatever I had in my fridge, and it was great!

Here's a recipe for Mint "Pesto" I whipped up lately. It tasted awesome on the peas and scallops but would probably taste good on anything else, including cardboard. It's that good.
I also love mixing mint into tuna pasta salads and using it to flavor anything made with beets. Beets and mint have an incredible affinity for each other.

well, I'll have to go out and look for that book I geuss. I have not seen it in my local book stores. Perhaps I'll just tweek a recipe I have.

One of my friends has a garden that's probably 1/3 mint (I'm told it takes over reaaaally easily), and she makes phenomenal truffles with it by infusing the cream with the mint leaves. She grows both regular and chocolate mint.

I enjoy a little in a regular green salad--just chop it finely. Also great, of course, in iced tea, lemonade, and with peas. I didn't know about the mint/beet combo, however. I'll have to give that a try!

My favorite mint recipe is mint-coriander chutney. It is good with almost any meat or vegetable, is traditional as a dip for Indian breads, and is very addictive. :)
