Early sweet corn!

This week-end I bought a dozen ears of local sweet corn....very early for WNY. It's incredibly tender & sweet....I roasted it on the grill with the husks on, then removed the kernals from the cobs from the corn that was leftover from dinner. Not sure what I'm going to do with it yet. What a pleasure to have sweet corn already!
Is there anything out early at the Farmer's Markets by you? What are you doing with it?

Not that green beans are early - but this weekend I got some purple green-beans at the farmers market and cooked them up last night and was so disappointed when the turned green after a few minutes in boiling water!

mepolo, I was just in WNY! I grew up in Cheektowaga and we had a family reunion in Wyoming County. I was really really hoping that I could get some sweet corn while was up there but I guess I was a week too early! And damn, it was chilly out!

I love making raw sweet corn salad with a simple lime dressing. Perfection.

I've made my sort-of succotash salad twice already this summer, and in fact just ate the latest leftovers for lunch today - yum! Just cut the kernels off of four ears of sweet corn (I use it raw), mix with baby lima/fava beans (careful not to overcook), halved grape or quartered cherry tomatoes, fresh basil (and whatever other herbs, like oregano and Italian parsley), salt and pepper, and a dressing of mustard (I use a blend of stone ground and Nance's hot mustard), olive oil, and balsamic vinegar. I never measure anything, but it always tastes just about perfect.

LibraryLady....you did come a week early...it's hotter than heck here this week! I believe the corn just started being harvested last week-end, as I normally shop farm stands on the week-ends, and this is the first week I saw it. I'd suggest the relatives send you some, but it probably wouldn't hold up well. :-(
