Over easy, chicken sausage, biscuits and cream gravy with a big glass of milk..

I'm a veg, but just for fun, i'll post what I used to have when I wasn't veg:

Eggs scrambled (I prefer over easy, but I don't trust most restaurants to get safe eggs and keep them at the right temp...that might be Anthony Bourdain's fault from 'Kitchen Confidential')

...but I'm with LunaPierCook - I want hash browns, too!

I find it easier to get them over easy than soft-scrambled, but that's just my experience, so that's what I order.

They ideally should be next to potatoes, call them what you will, but they should be cooked with onions, please.

Bliss would be real country ham, not what's usually found in restaurants and diners. Failing that, yes, bacon, crisp, please.

A slice of really good summer tomato works well on this plate. (A friend of mine would walk into diners carrying his own-grown and ask for a knife.)

Bread? Biscuits only if they're as good as the Florida Avenue Grill in DC; otherwise, sourdough toast or perhaps challah toast, buttered. Blackberry jam, please.

Orange juice, only if it's squeezed to order, and don't get me started on that topic.

Coffee and whatever real milk product is in the kitchen, not this artificial junk.

I usually prepare myself lightly poached eggs (the water should be ALMOST boiling - but not boiling), over rye or pumpernickel toast (sometimes steamed spinach goes underneath - the lazy persons eggs florentine!) and I want the standard, crispy streaky bacon, definitely crispy (the brits don't know how to cook bacon i've discovered!).
Add to this freshly squeezed OJ, or a mimosa, black coffee, fried tomatoes/onions/mushrooms, and a piece of melon and I'm in heaven.

Scrambled eggs with mushrooms and cheese. Bacon fried really crisp. Side order of crispy hash browns with onions. Southern biscuits with jelly. Freshly squeezed orange juice and slice of melon. No coffee. Just make a second helping available. I only get this when traveling. BooHoo!

potatoes - really crisp hashbrown or home fries, whichever you want to call - with a little ketchup on them.

I like sunnyside up but when I eat breakfast out I usually order over easy so they don't come out too runny.
So: over easy, crispy bacon, rye toast, hashbrowns scattered and smothered, no juice, decaf coffee with cream and sweetener. Ah.

what kind of breakfast meat would you like? Fake bacon (read soy bacon), but you'd hardly find that in most diners.

What kind of juice? None, thanks.

anything else? I'd really rather have French toast with no powdered sugar.

god, looking at this list I feel like a glutton.

over medium, bacon, home fries, rye toasted dark, tomato juice ice cold with hot sauce, coffee with just a bit of honey and half and half. Maybe a small order of pancakes to split with my wife.

eggs over hard- go ahead and break the yolks.
wheat or rye toast w/jelly- biscuits would be fab
ham or bacon or sausage depending on my mood
no juice! maybe skim milk
coffee w/cream and sugar if needed

If it's a regular diner, I'm quite fond of scrambled eggs with sausage, toasted english muffin or bagel on the side, and a glass of fresh oj (if they have it). I don't drink coffee. If it's slightly more upscale, I like eggs benedict.

I usually also order either crisp hashbrowns, or grits with plenty of butter.

Eggs over medium. Hash browns. Wheat toast, in order to transport the eggs into my mouth. Bacon that isn't burned please. Maybe a biscuit on the side if there's real sausage gravy. Or maybe a waffle if I'm at the waffle house. Just lots of water to drink, because if I'm in a diner, I must be hungover. That's the only time I don't make my own breakfast.

what kind of toast bread? Wheat with a generous amount of butter on each slice, biscuits if available.
What kind of juice? Really pulpy orange juice.
coffee? tea? cream? sugar? Coffee with lots and lots of sugar

anything else? Hashbrowns, cut matchstick style, topped with cheddar cheese and ketchup. Yum!

Sunnyside up, cooked in olive oil so I get lacy brown edges, lid on pan for the last few seconds to film the yolks without risking breakage by turning them over.

Eggs - Properly poached, no runny white
Meat - corned beef hash, period. Otherwise, well-done, extra crispy shredded hash browns or extra crispy homefries
Bread - good biscuit, toasted rye or a bagel
Tomato juice with lemon, no ice if they don't have a bloody mary
Coffee with cream or steamed milk
Anything else? Good country milk gravy or properly made hollandaise

BTW, if you've never tried hollandaise on your corned beef hash, try it (no, don't think about your arteries).

Also, I always order hollandaise for an omelette if available. Excellent. Especially one with spinach.
