I'm headed to VEGAS, BABY, VEGAS next weekend for a three-day whirlwind girls' getaway. What's the one dish/treat/culinary experience in which we absolutely must indulge?

You must venture off the strip to Lotus of Siam. It's a tiny Thai restaurant in a weird strip mall that has so many top reviews they could wallpaper the entire restaurant with them. Many reviewers have called it the best Thai food in North America. I went there in January and it was amazing! I recommend the northern style Tom Kah Kai soup - it's totally different from other Thai soups I've had because it doesn't have any coconut milk. Yum...and order the sticky rice with mango for dessert. I dream about having it again!

Vegas is really a meat and potatoes kind of place.
Dry aged prime steaks at any decent steakhouse with a good bottle of red wine.
