pio pio sauce recipe
I am leaving New York soon, and for the past five years have been trying to figure out what is in Pio Pio's green sauce....unfortunately i have have had no success...does anyone have any suggestions? Maybe the staff at Serious Eats could put their culinary clout together to procure me the recipe as a going away present

Did you see this thread when Robin wrote a review of Pio Pio for gothamist? I asked about the sauce and she dug up some recipes off the Internet.
I've been trying forever to make it. Every Pio pio you ask has a different answer for what's in it although they do agree it's basically "jalapeno mayo." Honestly, my best result has just been to make homemade mayo -- but pureeing the fresh jalapenos at the beginning and then making the mayo. Add a little lime juice, a little cilantro in there. It's not dead-on but it's the closest I can get.

hi. i have only been to NYC once and i ate at pio pio. i cant stop thinking about it years later. My mom frequents NYC and goes there.......... she asked them what they put in the green sauce and they also mentioned "avacados". may be your missing ingredient?? i am currently looking up all i can on this to see if i can recreate. but pio pio is so good i think it might be next to impossible to do. But i found that the "aji" sauce might have avacados (according to a worker at pio pio...... and looking at other recipes elsewhere they use/............. lettuce, jalpenos, onions, cilantro, garlic, lemon, oil or mayo,........ IF YOu or anyone lese find out more let us know!! i am going to try it with avacado and see what turns up.
