Macarons....

I want to make some macarons for out family. Every recipe I have or looked up has a nut component in the recipe, the issue is that I have a family member with a life-threatening allergie to nuts (sad I know) Does anyone have a recipe for macarons without nuts as a ingredient?? Much appreciated!

I made these Lemon Macaroons from the April 2007 Gourmet and they were delicious. I didn't have a zester so I left out the lemon and they were still very good.

Oops. I guess coconut would be considered a nut component. Sorry!

coconut is ok with her allergie issues, thanks so much!! She's a foodie, like me, and its hard to be one when you are so limited.

I use Ina Garten's recipe for coconut macaroons. 14 oz. sweetened shredded coconut, 14 oz. sweetened condensed milk, 1 tsp. vanilla extract, 2 extra large egg whites and 1/4 tsp. kosher salt. preheat oven to 325 degrees. Mix coconut,milk, and vanilla in bowl. Whip egg whites with salt to med. firm peaks. Fold into coconut mixture. Line sheet pan with parchment, and use ice cream scoop to portion on pan. (20-22 cookies) 25-30 Min, til golden brown. Easy, delicious!

hummm...I'm going to have to do some serious research :) I'm not looking for that style, but want to replace the almond, in the almod based ones...

Lilartist- Go to recipes.com. They have an assortment of recipes, including "mock" macaroons. Hope this helps.

Use coconut and pulse it in the food processor, I did it that way with a lemon curd filling was bellisimo. If your using other than nut you must make a nice thick meringue like an italian one which you would do over a double boiler to get a nice body without the ground nuts. I would try it dried fruit pulse that in the food processor as well.
Time to experiment.

aren't you talking about the Parisian macaron pastries, NOT coconut macaroOns?
