favorite summer meal

During the summer I find I look forward to the simplest of meals- a grilled hot dog with fixins, great potato salad and coleslaw, and fruit pie. What is your favorite meal during the summer months?

Avocado tacos - cubes of perfectly ripe avocado w/ lime juice, salt, and pickled jalapenos in a warmed corn tortilla - are my favorite summer lunch. They take around five minutes to make, are super-delicious, and don't require heating up the kitchen.

A green chili cheeseburger hot from the grill on a toasted bun with an ear of freshly picked sweet corn and sliced home grown tomatos.

fresh tomatoes with a splash of balsamic vinegar or some nice melon with a little proscuitto. or best yet, an ice cold fresh fruit salad with black pepper! yummy

I agree with the whole hamburger/hot dog on a grill idea - nothing says summer outside more (to me) than flames, some meat and grilled vegetables (although I sometimes opt for the more pedestrian Ruffles bag!).

Inside summer meals? I love fresh, fruity, goat-cheesey salads - maybe with shrimp or tuna.

Shrimp louie made with baby shrimp, chopped avocado and celery, minced scallions and garlic. For the dressing, mix Hellman's mayonnaise with lemon juice, S&P, and a healthy dose of Louisiana hot sauce. Chill well and serve on a bed of summer greens, or stuff the mixture into a homegrown vine-ripened tomato. Yummy and refreshing!

Food I look forward to in summer: black raspberry ice cream with chocolate sprinkes, corn on the cob, Jersey tomatoes, anything grilled, and blueberry vodka lemonades. All preferably consumed while on a porch or terrace overlooking the ocean!

Grilled anything sounds great just about now! Back before I stopped eating meat, I used to enjoy a picnic of half a cold chicken salad sandwich and fresh potato chips.

The ripest reddest tomato you can find, seeded and chopped, marinated for a few hours with minced garlic, a splash of the best olive oil and maybe a drop of vinegar, then served on hot pasta, garnished with cubes of fresh mozzarella and a chiffonade of basil.

Just picked corn on the cob and sliced vine ripened tomato. Grilled steak with potato salad. I'm seeing scrawny corn on the cob in the store lately and wondering where it came from, and why they picked it so early . . . Ooooh, fresh peaches for dessert!

does anyone else know the southern traditional wilted lettuce salad? My favorite part of summer with silverqueen corn and something from the grill...

Crisp veggie salad, grilled corn on the cob & iced tea. Followed by a walk to an ice cream shop or a homemade s'more.

I second all the thoughts of ice cream. Mine would be spicy lemon & rosemary roasted chicken and new potatoes, followed by soft vanilla ice-cream & plump raisins.


Fresh-baked bread with a peppery salad, definitely, and fruit cobblers. Mmmm.

roll out the brown paper, and hand out the mallets and the nutcrackers. Summertime with a pile of steamed blue crabs and lots of cold beer is where it's at here on Chesapeake Bay.

Chicken or steak grilled on the barbie, home made ice cream, potato salad, fresh sliced tomatoes, bowls of sliced melon, especially canteloupe, wonderful red cherries that I eat until I'm sick, peaches, nectarines. It's so nice to see the fruit of summer after a long winter.

sorbet, sushi, cold soba. Mangoes.

A nice thick steak done rare, boiled salt potatoes, and corn on the cob with lots of butter....my favorite summer meal.
Another favorite summer treat is a ripe tomato sandwich with mayo on squishy white bread with just a pinch of salt & pepper.....the tomato has to be warm from the garden....heaven on earth!
btw Kbear919 - my mom here up north used to make wilted lettuce salad with warm bacon dressing all the time....I haven't had that in years.

Fresh-from-the-garden tomato & basil Caprese salad...plain and simple!

icy cold milkshakes....heaven!

GRILL FOOD, of course! Bell peppers, Vidalia onions, mushrooms, zucchini, cherry tomatoes, marinated in olive oil/balsamic and tons of fresh herbs....chicken or steak skewers....watermelon/red onionfeta/olive/parsley/mint/lime juice salad....corn on the cob with parmesan...and strawberry shortcake!

When it's really hot outside and in I prefer not to cook and I like to stay hydrated. I end up eating a lot of salads and a lot of fruit. Although I like barbecued meat, I find that meat takes a lot of energy to digest and makes me sleepier on hot summer days so I make grilled meat an occasional treat.
