does anyone make their own sausage?

bought my dad a meat grinder for christmas last year and we haven't taken it out of the box yet...I guess we are a little intimidated....anyone have success?

Yes Yes Yes...I've only made a few but always want to try more. A simple fresh sage and pork loose breakfast sausage is fabulous, and I've ground venison with pork and made hard salami with red wine and herbs. Get a book and start cooking....(keeping ingredients cold while working and adding a little water to loose sausage really help).
Also, casings can be purchased at many grocers, but you often have to ask at the counter and buy a quantity, but they freeze well, and are cheap even if you don't use it all.

Check out Ruhlman's CHARCUTERIE book for good guidance and recipes. And go for it!

It takes practice and a good teacher to become skilled, but it's a lot of fun, even just starting out. "Charcuterie" by Michael Ruhlman and Brian Polcyn is an excellent place to start.

I make sausage all the time (real easy and not too time consuming) Italian (sweet, hot, & pepper and onion). The recipes are in Garde Manger The Art of the Cold Kitchen - The Culinary Institute of America. Most of the sausage recipes are for 10# but they are easy to scale down. There are also some good pate and terrine recipes. An all around good book. I agree the Ruhlman & Polcyn Charcuterie book is also a good choice. You can buy casings from most butchers, the ones that make sausage. They come 2 ways salt packed or in brine. The ones in brine are easier to work with. Don't have to be frozen just keep refrigerated. Enjoy and good luck.

Don't be intimidated. Making sausage is both easy and fun. Just keep your meat on ice.
