I can't narrow it down myself...I don't know if I've ever met a potato I didn't like!

I'm with you BaHa.......I love potatoes in any way shape or form. Yesterday for Mother's Day I made this totally not good for you potato dish that my grandmother taught me, and I embellished. Now those of you that are food purists...don't admonish me....some things have their place in life....
I take russet potatoes - peel & slice thin w/mandoline.....
layer the potaoes w/dots of butter, dry french onion soup mix, extra dehydrated onions & shredded cheddar cheese. I just keep layering til I've filled a 2 qt. baking dish topping the whole thing with butter, soup mix, onions & cheese....then bake @ 375 for about 45 minutes. This is sooo good.

I second that notion. Simple red-skinned garlic mashed potatoes are probably my all-time favorite, but aloo gobi definitely runs a close second.

Oooh...potatoes...here's one of my favorites:
-Wash and halve petite red or yukon gold potatoes
-Heat Extra Virgin Olive Oil in a pan that will be big enough for the potatoes you're cooking (cover the bottom of the pan with oil)
-Coursely chop a few cloves of garlic and add to the oil
-Add some rosemary to oil (fresh or dry - doesn't matter)
-Add potatoes to oil and let cook with lid on (stirring occasionally) for about 30 minutes or so (until potatoes are tender)
So yummy, so easy and always a big hit!

It's still a little chilly where I live. I've been dying for some comfort food, as kid my mom made with worlds greatest scalloped potatoes. That's comfort for me...I might just have to make some with some porkchops, before it gets warm again!

I am a huge mash potato freak and one of my favorite all time dishes that contains mash potatoes is Shepard's Pie! Delicious!

One, single potato dish to top all others? I don't think I could do that.. I love potatoes far, far too much... Gnocchi, latkes, pierogi, sweet potato fries, mashed, scalloped... There are probably very few ways I /wouldn't/ eat a potato, in fact! :9

Too many to choose from, I love them all!! But last night we roasted a chicken in the oven with potatoes underneath it. Probably not the healthiest way to serve them but they were so good cooking in all the chicken fat.

Roasted, baked, mashed, chipped -- all wonderful! We make our own oven fries, and enjoy them spiced with lots of black pepper, kosher salt and hot paprika.

Try sweet potatoes, peeled and quartered the long way. Sprinkle with olive oil, and coat with a spice mix of your choice. I like to combine cumin, paprika, cardamom, brown sugar, cinnamon, salt and pepper. Roast in a 375 degree oven for 35-45 minutes, depending on your oven and the potato size. Delicious!

I boil a few cloves of garlic with redskins (skin on), it gets mellow and sweet and almost gives it a roasted garlic flavor. Then I add gorgonzola, butter, lots of salt and pepper and sourcream or heavy cream. It's basically my favorite food in the entire world.
It KILLS me that my fiance is a "rice eater"
I just can not understand how someone could prefer rice to potatoes, I just can't.

I'll even eat the things raw, just peeled and rinsed in ice-cold water.
I've developed an oven-roasted potato salad even people who say they don't like potato salad have said they liked. I include chunks of fresh kielbasa that's been simmered in beer, grilled onions, roasted bell peppers, and a dressing made of Hellman's, horseradish mustard and a couple other ingredients.

Double baked potatoes or potato skins (yes the kind from places like TGIF). I do not like mashed potatoes alone but love them in a pie like a mexican pie.
to MML, I absolutely prefer rice to potatoes. Maybe it is because i am asian. Lol

People saying they don't like potato salad is like saying they don't like pie. Somewhere out there, there surely is one kind they'll like. I once read somewhere that every good cook has at least three potato salad recipes. That's pretty arbitrary, but after mumble-mumble years of cooking, I realize I have four that I can make at the drop of a hat. (And plenty more actual recipes in the kitchen library that used to be my pantry.
BTW, there's a restaurant in St. Louis called Annie Gunn's that always has at least 8 potato preparations on its menu.

lemons, while you're right about people saying that while not actually meaning it, I've learned their problem is more likely that they've had that one kind of potato salad at family reunions or from Kroger for their entire life, and they really don't know there are more varieties out there. Unfortunately, their mind is solidly set that way, and you can't convince them otherwise without begging, "Come on, you'll like this one!"

roasted sweet potato wedges with homemade honey mustard. or potato gnocchi with pesto...or chive mashed potatoes....or potato-filled Indian samosas..or greasy diner hash browns...seriously, anything WITH potatoes is my favorite!

Definitely a tie between Garlic Red Skinned Mashed Potatoes and Sweet Potato fries. Yum!
