What to serve with quail?

So I've almost decided on how to prepare the quail I've gotten from FreshDirect....(yes, it's been sitting in my freezer all this time, for shame!)

What should I serve with it? I'm thinking spinach with white wine and garlic, but I don't know how good that is...and also, what starch? Something good.........

Any ideas???

Quail? Gosh, I've got 5 kids & 11 grands for Sunday dinner. A quail would never do it. But! Spinach? I have a fantastic creamed spinach stuffed portabello. That might do it if you're interisted.

Wild rice. Or perhaps couscous with pecans or almonds.

I love quail and was thinking of a few things to do with it.. I want to make a quail stock and stew quail in it and then shred.. Serve on toast with a quail egg and grits..

Quail and grits is a great combo.. We make quail and waffles with a rosemary syrup which is really good.. Debone and deep fry..

You can also stuff it with corn bread and sausage..

Wrap it with prosciutto is good..

Brine it for a couple of hours and then season it.. Hit it with a little whiskey before you broil it..

Escoffier says the only way to eat quail is to cook in butter..

Batalli does something with quail and artichokes in a wine broth that is a really nice recipe..

Fried quail salad is good too.. Coat in cornmeal and can serve it in pieces with scrambled quail eggs and bacon lardons..

Brine, split and grill the quail (season with Tandoori seasoning!)
Parmesan roasted garlic mashed potatoes
Creamy wild mushroom risotto

I'm hungry now!!!

Wild Rice is as easy as it gets, a couscous with cran-raisins and black olives (chopped and pitted). Very good

Radicchio and something tart (pickled fruit.veg?) and parmesan polenta.
