What is/are your favorite crockpot/slow-cooker dish(es)?

Everyday crockpot and slow-cooker dishes are generally beef with potatoes, carrots and onions, or a slow-cooked corned beef with cabbage added later, or, as we're having this evening, chicken and dumplings.

Do you stick with these "standards"? If not, what is it you like to cook in these beasties?

I loooove my slow cooker, but mostly only use it during colder months to make soups, stews, roasts, etc. I also really like to use it for things like spinach-artichoke dip, mulled cider, and mulled wine. Good for layered
casseroles, too!

My sister takes a fresh roast and puts it in the cooker (not a defrosted roast). Then she takes 2 jars of bbq sauce, covering it. The sauce usually doesn't cover the roast entirely but if you want it to cover, just add some vegetables. After cooking it all day it's a fantastic bbq!

I like to make a "Spaghetti Pot Roast". All you really need to do is toss everything you would use to make spaghetti sauce into the crock pot with a roast and let 'er rip. Just serve over cooked pasta, and it's yum-o! I've never tried it with ready-made spaghetti sauce, but I bet it would still be fantastic. You would probably just want to add peppers, onions, mushrooms, etc. (whatever you want, really) for texture. So good!

I also use my slow cooker for party dips like salsa and queso, chorizo chicken cheese dip, etc.

I do not own a slow cooker or crock pot. My husband made me aware of this on a walmart trip. I asked him what I would do with it. The jury is still out.

I throw in chicken legs soaked in red wine with onions, mushrooms, spices, and a few other things. Comes out like a tasty marsala.
