very easy recipe for dinner party for six?
We're having four friends for dinner on Saturday (they are all psychiatrists), and I need a festive but easy dish to make. Any suggestions?

Do they like pasta? Are there dietary restrictions? Are you trying to impress or just make comfort food?

Roast a couple of chickens. I like to put vegetables in the bottom of the pan--onions, fennel, carrots, taters white or sweet, some garlic--rub the chickens with some butter, squeeze lemon juice over, salt and pepper. Some smoked paprika if that grabs you. Make a nice green salad. A delicious and elegant dessert is Patricia Wells' Lemon Lover's Tart from At Home in Provence. Easy to make. Then of course you can make a great pot of soup on Sunday!

Arroz con pollo, One pot dish, you can make it colorful and spice it up if you need to. Inexpensive as well. Serve that with a nice green salad with like a cabrales blue cheese dressing and you can stick to a spanish theme.

For dessert make panna cotta...you make it ahead, it's basically mix, stir, pour, and it's always impressive.
