This is supposed to be "Serious Eats?!"
OK, I've been around here for a month or so, and frankly I'm getting a bit sick. I'm a "serious" cook, and I didn't come here to hear a bunch of housewives cackling about "we are what we eat," or fat people's supermarket impulse buying, or anything remotely related to "PBJ," which also sounds a bit too much like "EVOO" from the seriously non-eats Rachael Ray.
I'm serious, people. Get a grip. Make this a serious food site, and not another Food Network. (There is some good content here, btw, or I wouldn't have checked it out in the first place.)

I think there's room here for all. I could care less about PB&J, or reviews of New York restaurants, so I simply skip those posts without reading them. There's enough here that interests me to keep me coming back.

Well Big Al, why don't you post some questions you would like to hear answers to instead of being so critical of the rest of us. I would say the tone of this website is light and fun and not at all serious and that is the way it is meant to be. There are plenty of stuffy food sites out there for you if you want it that way. I think it is pretty crass of you to use the phrase "cackling housewives" . It's complainers like you that ruin the fun for everyone else. Go away!

What I love about this site is that it is about food culture, and it does have excellent content. And the thing I love the most, is that the gang at serious eats is not full of food snobs but mainly foodies - there is a difference! All the topics discussed are matters that effect our culinary culture. And should be discussed.

Big Al, Ed Levine, Serious Eats overlord here. Serious Eats is all about fostering conversation about the pleasure, culture, and even the business of food. We talk about and report on anything and everything going on in the world of food, from where to find the best cheeseburger on the planet to a kitchen gadget one of our community members would like to see invented. We hope the content and dialogue our community generates is equal parts delicious, enthusiastic, and important. That means we might talk about the perfect peanut butter and jelly sandwich one day and the best way to cook a bone-in ribeye steak the next. Our mantra here at Serious Eats World Headquarters is discerning, passionate, and inclusive. We'd like every piece of text, every video, and every interaction on the site to live up to those three descriptors. We're trying to have a good time and talk about things that are important food-wise at the same time.
So the question of the day might be about grilled cheese sandwiches one day and trans-fats the next. We like it that way, and we hope that you do too.

Jeez, Al--why don't you post a "serious" question and start a conversation? I'm a new member here and I am enjoying it immensely. It's all about what you yourself can contribute. Food/cooking is about love and generosity; I and, I suspect, most of the people here joined in order to share that love and pleasure and to trade ideas. Skip the questions that don't interest you. Join the conversation.

The thing I love about this site is that it's not Pretentious Eats, it's Serious Eats. I love food, and eating, but I'm not educated on the topic and love feeling like I'm not being dismissed just because I come at this from the perspective of an enthusiast, instead of being an expert. I find all of the healthiest, most vibrant communities on the web are those that respectfully welcome new members, and I've appreciated that even my presence here as a lurker is accepted.
The only thing I'd change is that there be more content on the site. :)

there is a time for all kinds of food including grilled cheese and pb&j . Its kinda sad to dismiss things most of us grew up eating because our tastes may been exposed to other things. Personally I still love a good grilled cheese sandwich with a bowl of (gasp) canned tomato soup. Please dont send out the lynching team.

Please understand that many of us did not grow up with these foods. I never had PB&J growing up; I had pepper and egg sandwiches. Grilled cheese sandwich? Sure, with mozzarella. Canned tomato soup? Never heard of it. No lynching team required.

What on earth?? What makes this site rich for me is the variety--of tastes, comments, experiences--and the usually generous, lighthearted way in which everyone shares advice and conversation. Al, I'm sure if you have a topic you would like to discuss, and you post it, you will be treated with courtesy, too. But there is no reason to attack people, or to insult people, or to assume your opinions are more worthy than anyone else's. Perhaps we all need to be serious about the way we treat each other, as well as serious about enjoying the experience of eating.

The "cackling housewives" comment ellicited exactly what I was hoping for. So let's talk, let's chat... pretty soon I'll be baking cookies with Hillary. But really, you all must get my point. (Yes, I mixed it with a few jabs.) I like the serious stuff, the hints, kitchen gadgets, great recipes et al. I love to cook! But "PBJ" isn't on the menu. Sorry.
I suppose if I had signed my rant "by Anthony Bourdain," more of you would have understood, and maybe laughed.

I think it would be nice not have any sort of political talk on this website. This is my break from the complaining and arguing that goes on at other sites, TV, radio, coffee shops etc. I don't want to be judged for my beliefs on a FOOD site! Lets face it, we all have different views about politics, global warming, environment etc...but the one thing that is east to agree on is FOOD. Can we please keep our views on other things to ourselves so that we can enjoy eachothers company here and talk about cooking and eating and favorite restaurants and funny food experiences and anything else that belongs on a food site? That's my 2 cents!

It seems to me Serious Eats has to do with being serious about food and the enjoyment of the experience of food. I love the fact that sometimes this site talks about gadgets, sometimes about gourmet restaurants, and sometimes about peanut butter, how you like your brownies, what goes in your ice cream, what are you cooking this weekend and things that people who seriously love food LOVE to talk about. It's nice to see that different people who love food, or otherwise would not post on this site, actually respond to these questions, with enthusiasm I may add, whereas others would think of them as ridiculous. So Serious Eats, keep being the way you are. I am sure that's why people keep coming back.

Some here seem to want to levy personal attacks on me, and also play amateur psychologist. Others think that politics has no place on this food site. Well, I hate to disturb your rosy little world, but when politics starts to inflict itself on the food world, I WILL point it out. When liberals/socialists are driving opinion and policy that impacts my basic God-given freedoms to eat whatever I want, or my freedom to allow people to smoke in MY restaurant or bar (if I had one), then yes, I will get angry, and yes, I will say something.
Rather than just attacking the messenger, it would be more reasonable to argue the point itself if you disagree.

Who cares? If you wish to dispute any current FDA policy or local laws, then post a query and start a conversation. Just get over yourself and get to the point, okay?!

further al's comments: i appreciate that this forum is inclusive, but i wonder if there isn't a market for a kind of sophisticated food board.
i think one of the problems with the food channel for example was that when it began it was a great place for serious chefs to observe sophisticated/classic techniques. now of course, you know, it's kind of degenerated into a personality network -- nothing really to learn there. (i particularly dislike the competitive cooking trend.)
so, it's great that this forum can keep it light -- maybe the name "serious eats" is a little misleading -- but i wonder if it is even possible to have a board where people could share ideas/knowledge from serious chefs (who? someone like ferran adria eg). so maybe that's something the moderators/contributors could consider -- a high end area.
SPECIAL NOTE TO AL: i am so far left that i am nearly a communist. hell, i AM a communist. but, i love foie gras and marlboros. so i wouldn't blame this food-policing thing on socialists/liberals. in nutshell: FRANCE. great food; no rules; rampant socialist-intellectuals.

Ok, is it just me that notices the big smiley face in the logo? The one that sort of indicates that this is a "seriously" fun kind of food site and not the place to come if you are looking for the EXACT opposite of that?
