Thursday is our regular pizza night, but it being Passover, and us being somewhat Jewish (we're still practicing), it seems that a matzo pizza could work.....anyone?

Sure that could work. Buy some fresh mozzarella, slice it thin and in half, add some high quality canned tomatoes, a little bit of sea salt and cook it either in a broiler or toaster oven.
