What to do with that pink meat?
No, not SPAM -- this time, I'm talking about corned beef. Can you do anything else with it besides boil it with cabbage and potatoes?

I saw a couple of recipes online for a Rueben-style Dip made in a crock pot.
And of course there is the Rueben sandwich, how I prefer corned beef.

well, there's hash.
But the best tinned corned beef hash thing is what my dad makes (I think it might be a HK specialty):
(1) Scramble half a tin of corned beef with three eggs or so.
(2) Serve on fresh sweet San Francisco sourdough bread, sliced and toasted.

In the Philippines, you sauté it with onions and diced potatoes. Eat it with garlic fried rice and an egg or two for breakfast or dinner, yum yum. Or alternately after sautéing, just fold it into an omelette.
