want to make a special seafood dinner for that special someone...would love to get some of your favorite, most delicious, uncommon seafood recipes.

I love seafood and make it all the time. I don't have any unique recipes though. We eat crab legs alot and I try to make some nice sides to go with. When I make lobster tails, I sprinkle a mixture of bread crumbs on top (bread crumbs, garlic, parsley, olive oil) then but a pat of butter on the top and one under the meat in the shell. I always put the meat back in the shell for cooking. I find if you pull it out to cook it gets dry. I love sea scalllops and I often just sear them lightly in a cast iron pan with salt, pepper and a little butter. They don't need much cooking this way and they are very tender and tasty.

I eat lots of fish, but I also wouldn't consider any of my aproaches unique. One of my favourite things, though, is whole trout baked in the oven. You put some white wine, butter, garlic and sprigs of herbs in the cavety, wrap it in foil and bake it in a moderate oven until it's done (depends on the size of your fish, obviously). This is a pretty typical Norwegian approach, minus the garlic (bagt ørret) and it's fantastic. Also, many people aren't used to trout, so it's a bit novel.

How about salmon in puff pastry? There must be about a billion different variations on this theme, but I particularly like Delia Smith's slightly Asian take:

While this isn't uncommon, an indoor clambake is a big hit whenever I make it. And it's an easy one pot dish...almost fool proof. All you need are any amount of fresh seafood you want (lobster, clams, shrimps, etc.), small red potatoes, onion, some herbs and a good bottle of white burgundy wine. And make sure to have some crusty baguettes to dunk into the broth!
