I recently came across a very well done cook book devoted to nothing but grilled cheese sandwiches. It had receipes using gruyere, chedder and things like a greek grilled cheese with feta & a grilled cheese margharite with basil, tomato & mozzarella.....
While they all looked delicious & worth trying, they were not "grilled cheese sandwiches"....they were "grilled sandwiches that contained cheese"
It goes beyond simple semantics, it's about what you grew up...so.... I'm with Amy Joe....
The grilled cheese sandwich of my youth is made with American Cheese (not velveeta)....and it is dunked in campbell's tomato soup (once in a while vegetarian vegetable)...and...I like mine slightly burnt!
If it weren't for all the damn salt in the soup, I'd eat this combo all the time.

American cheese, crap sliced white bread, Heinz ketchup. (Although, in the right mood, I will do a Swiss on rye with mustard grilled cheese.)

Trader Joes has an excellent tomato soup that has replaced Campbell's for me. It's in a carton and I think it's called Creamy Organic Tomato soup....It is soooooooooooooo good!

I prefer cheddar, but nothing tastes like a real grilled cheese more than smooth melting American.

If I was just eating a regular grilled cheese sandwich then by far I would have to say Colby/Monterary Jack cheese- two slices!
But usually I like to add other ingredients to my grilled cheese like tomatoes or avocado's are delicious.

trader joe's fontina--with sliced tomato (salted and peppered before going between crusty sourdough; sometimes add a bit of pesto to give it some zip!)

American Cheese on wonderbread, dipped in ketchup or tomato soup.
Now if I am feeling fancy it is extra-sharp cheddar, muenster and tomato on sourdough dipped in tomato bisque.

I'll try just about any hard cheese in my fridge. Last time, I melted aged manchego over ripe avocado slices on a crusty Sullivan St bread. Mmm. (sorry, purists)

I'm ashamed to admit it, but sometimes I eat muenster just melted on bread in the microwave with a little salt... I'm at school and only have a microwave so I have to get creative.

I say again ...WITHOUT SHAME, Velveta...just becareful you don't scortch the roof of your mouth ( or your chin as it drips down) with the molten "cheese food" I love good cheese and I would not consider velveta in much else, but that's a childhood favorite!

The last grilled cheese I made was with Kerrygold Dubliner, and it was awesome.
I also used mayonnaise instead of butter on the OUTside of the bread. It browned perfectly and evenly and was nice and crispy. It also hid the fact that I was using some horrible whole-grain organic rye from TJ's with added powdered granite. Uuuuch! But as a grilled cheese it worked really well.
When I was growing up, we had a gas stove, and I ate innumerable open-faced broiled cheese sandwiches. The best was when the slice of American would develop one large bubble that would then turn dark brown. So good!
Today I went out for lunch and just happened to have a grilled cheese with avocado on multigrain bread. It came with some kind of homemade tomato soup. It was really good! If any of you are in western MA, it was at the Esselon Cafe in Hadley.

I liked to use herbed havarti on whole grain - nice and buttery - for breakfast grilled cheese (w/ a dab of dijon mustard).
However, any other time, it's Velveeta (still on whole grain bread) with Bubbie's Brand bread and butter pickles on the side - Yum!
