I'm bored with my panini maker.

Anyone have any favorite Paninis recipes? Any tips on the best kind of bread to use? I either end up with a super flat sandwich with all the stuff oozing out, or one with the bread so crusty and hard it hurts my mouth to eat it!

Another dessert "recipe", which I saw in Gourmet or Bon Appetit some months back, involved simply pressing a glazed Krispy Kreme in a panini maker--sounded fantastic.

I remember making paninis with a cast iron skillet and a 2 lb can of tomatoes on a plate. This is like the grilled cheese thread. You have to use some form of fat. Olive oil or butter. You have to use a nice heat but not too high or too low. You cannot walk away. The bread you use is important. I tend to use bread that will toast nicely.
I am board with my panini grill too. Luckily it has 2 sets of grids, and I use it for bacon and breakfast sausages.

The Williams Sonoma Grilled Sandwiches book is excellent and includes paninis for all meals. Very diverse book ranging from just a couple ingredients to many.

PB&Nutella panini. Think outside the normal cheese/meat combo box. The sandwiches cookbook from 'ino is amazing.
