I need recipes that call for servings of two? Help please????
Hey All,
I am desperately looking for any type of recipes that call for servings of two. I live with my boyfriend and that is it. I have no children and all I can find are recipes that yield for four or more. Please help!

Can you just make half of the recipe for 4? Or make the whole thing and have leftovers later in the week?

It's just my husband and I also. I often have leftovers, but then we just bring them for lunch the next day. It saves money and time that way. If that doesn't work for you there are many cookbooks out there based on cooking for 2.

I live w/my boyfriend to. We either halve recipes or make something for 4 and eat it over 2 nights.

I cook for 2 sometimes. This is against my genetic makeup. I always cook for 4 when I cook for 2. My husband takes the leftovers for lunch and then there is usually a portion or so left over for "leftover night". The night I do not cook and we raid the refrigerator.
I was young once, I remember the wanting to simplify my kitchen time so we could spend more time together. Ah the young. Buy some ziplock containers and freeze the leftovers for quick microwaving when you don't want to cook.
Portion things. Buy the family pack of boneless chicken breasts/steaks/hamburger/pork chops/fish fillets (this saves you money) buy some freezer paper and wrap portions of 2 then ziplock bag. Use a marker on the front so you can tell what it is. Mystery freezer food night can be fun but not all the time. I do this with all my proteins.
A good dinner for 2 that is quick and not too shabby is make a big salad, all your fav veggies and a good dressing, top it with olives and hardboiled egg, slices of bacon/chicken/left over steak, cheese of your choice. Break out some bread and pour the wine.
It is good filling food and takes very little time so the 2 of you can spend that precious time together and clean up is a cinch. Be well.

I also live with my boyfriend and just eat the leftovers the next day - or make them into something different. Make a pot of black bean soup with lime and then create burritos the next day or add the beans into a chili. Also, there are tons of websites out there that do conversions on recipes (I know AllRecipes has a good recipe converter for number of servings/people).
