Healthy, College Budget Pasta Dish
My boyfriend asked me to make him pasta this week, and I am at a loss! Any suggestions for a healthy, cheap, delicious pasta dish? (He eats almost anything. He LOVES food.)

Nothing more delicious than pasta with olive oil, garlic, and parmesan cheese. Add some minced anchovies if you dig 'em. Sautee 'em in some oil before adding.

3 cloves of garlic
salt and pepper
some dried or fresh basil
28 ounce can of kitchen cut/chef's cut/crushed tomatoes italian style
OR 1.75 pounds of ripe roma tomatoes (skin in boiled water and then dice)
grated cheese of your choice
saute your garlic
add your tomatoes
add salt, pepper and basil
put your pasta to the boil
bring sauce to a boil then drop to simmer
when your pasta is ready toss with sauce and grated cheese all over it

I love making Red Wine Pasta. It's not too expensive when you consider the size of slivered almonds and golden raisins packages. Just use cooking red wine, no need to buy an expensive bottle of fancy stuff. :)

Linguini with sauteed broccoli rabe, garlic, a couple of tablespoons of chopped walnuts (or pine nuts). Salt to taste.

Amazing sauce: canned white tuna, chopped green olives, one (drained) can of diced tomatoes, crushed red pepper flakes garlic, olive oil, salt to taste. Just saute the garlic and red pepper flakes in a frying pan or saute pan the oil for about 30 seconds, then add the rest of the ingredients and cook, breaking up the tomatoes a bit with your spoon. Cook about ten minutes (taste it and you'll know when the flavors have combined), and you're golden! You can basically put this sauce on when you start your pasta water boiling, and everything should be done at the same time. It's delicious, healthful, and tastes fancy!

Guys LOVE spaghetti all carbonara. Easy and really delicious.
Heat 3 tablespoons olive oil in large skillet over medium-high heat. Add at least 4 (I go for 6) cloves of crushed garlic and cook until golden. Remove the garlic and add a chunk of either panchetta or bacon (I'm a veggie, I use fake stuff and it's still good). Cook until edges are crisp and add 2/3 cup white wine (cooking wine is fine) or broth if you can't afford wine. Simmer until thick - about 3 minutes.
Cook pasta al dente! Do not overcook. Bring salted water to a boil in a large pot and add pasta. Drain but keep 1/4 cup pasta water . Whisk in a large bowl 2/3 cup parmigiano, 2 tbsp. chopped parsley and 2 eggs. Slowly add that reserved pasta water while continuously whisking. Add spaghetti and panchetta mixture. Season with salt and a lot of pepper. Makes 4 servings.

this is sooo easy and super delicious - just cook a pound of pasta, add the juice and zest of one lemon, extra-virgin olive oil, flat-leaf parsley, salt & pepper, and top it all off with some parmesan cheese.

BakingAnd, a novice cook might well think that you meant real cooking wine (that stuff full of salt, sold in the supermarket). You of course meant an inexpensive wine to cook with, no? I don't want her to poison her boyfriend with sodium...
