Good recipes for quail?

I recently ordered some quail from FreshDirect, and while I've found some decent recipes, I'm a hopeless novice.

Any tips or suggestions?

Take the breast cage, stuff a jalepeno inside, wrap a slice of bacon around it and grill......it's the only way to go!

Stef, using kitchen shears split the quails in half, make a paste of olive oil 1/3 for two or three quails, salt, pepper, fresh garlic (5 cloves), rosemary (one or two sprigs), thyme. Put it all in blender and smear mixture onto quail, if mixture is too thick, thin it out with a little lemon juice (it should be pasty not clumpy). Brown quail in skillet using olive oil for 3 minutes a side, put in to roasting pan with a rack and cook in a 400 degree oven for another 15 minutes covered and the last five minutes uncovered. In oven a total of 20 minutes.

I remove the backbones with shears, impale them with a couple of skewers so they are open and relatively flat. Then I marinate them overnight in olive oil mixed with a little dijon, garlic, rosemary, salt and pepper. To cook I let them come up to room temp and then fire up a medium-hot saute pan with a little olive oil and cook them about five minutes breast side down. I turn them over and put them in a hot (400 degree) oven for about ten more minutes, or until the juices run clear. While they are cooking I mix up a quick honey-dijon-shallot vinnaigrette. When the quail is done I toss a salad of baby lettuces and mound in the center of the plates. I remove the skewers and lean them against the salad. I serve two quail per person.
