Chip and Sandwich Pairing

For potato chip and sandwich connoisseurs:

Disappointed by the sandwich + Regular Lays combination at many local lunch places, a friend and I decided the have a chips and sandwich party, where we will combine certain potato chips (no corn chips, but sweet potatoes allowed) with certain sandwiches. What would be your preferred flavor/texture pairings?
