Chip and Sandwich Pairing
For potato chip and sandwich connoisseurs:
Disappointed by the sandwich + Regular Lays combination at many local lunch places, a friend and I decided the have a chips and sandwich party, where we will combine certain potato chips (no corn chips, but sweet potatoes allowed) with certain sandwiches. What would be your preferred flavor/texture pairings?

I don't know if it's my favorite, but it's definitely the one that gets used the most often: tuna fish & regular chips.

This is an excellent topic. I was having this same discussion today (with myself of course) Lunch today consisted of a rare roast beef sandwich with swiss, lettuce and some horseradish mustard. And I paired it with New York Deli Chips. (the ones in the purple bag). Really liked it cause the potato chips were extra crunchy.
Nacho Cheese Doritos work with a Turkey Club as well.

Oooh, and here's another twist to this convo - region-specific taste treats. Many of us in the upper left corner enjoy the fab flavors of Tim's Cascade chips and Kettle chips. During the summer, my favorite indulgence is a sammie of thinly sliced cucumbers, Walla Walla slices, sweet tomatoes and a bare schmear of farmer's cheese on dark brown bread, with a huge pile of Tim's Wasabi chips on the side. Sometimes they're consumed with the sammie, sometimes they're in the sammie.
But now, in the middle of the bundled-bear winter, I rely on the comfort standards - grilled Gruyère & white cheddar [with tomato confit for dipping/smearing], paired with Kettle's Island Jerk chips or a nummy tuna cheddar melt with Kettle's Cheddar Beer chips [for the ultimate cheesy goodness!]

These are all good suggestions. I'm trying to think of what we have on the "menu", but we're trying to branch out and try different kinds of sandwiches, rather than regular turkey, roast beef, etc.
One example would be a sloppy joe type sandwich with Cape Cod's Jalapeno and Cheddar. Another, a small smoked salmon finger sandwich with dill chips (can't recall the brand currently). Kettle Chips have a delicious Spicy Thai which I think we have paired with pork.
I wish I had access to more potato chip brands in the south. Sometimes what we have just doesn't seem to cut it! However, I should add that even I was surprised by the different flavour offerings: we adored KC red pepper and goat cheese, and sour cream and garlic. If you're a potato chip lover, you should try searching for them outside of the supermarket.

I know you said no corn chips but I have to say that a hot pastrami sandwich with Frito's is my favorite. I love it!
