Best cookware?

Anyone have an opinion about the best pots and pans? Lots of people tell me to buy All-Clad, but there are several different types. Emerilware is supposed to be made by All-Clad and much cheaper.

All-Clad, of course.

I bought the Emerilware because I couldn't afford the All-Clad. I think it's great but then again I have never had All-Clad.

don't buy a set of anything. buy for what you need. ie le creuset cocotte for the oven; all clad for large sautes etc. copper for a gratin. restaurant supply stainless for a stock pot. cast-iron for fried chicken. batali has a great lasagne pan. sets give you usually at least 2-3 useless pieces. also, i think cuisinart is a great under-appreciated brand.

Swiss Diamond conducts heat very well and is virtually stain/stickproof unless you overheat it. It won't do what cast iron will do for very high heat, but it is otherwise very useful. Some pan shapes could be improved.

I love my Swiss Diamond. They have a terrific square grill pan, and you can make burgers on your stovetop all year round that come out great.
Once I tried the grill pan, I ordered all sorts of other pans from them. If you are willing to give up some browning to the heat conductivity and ease of clean up, then it's a winner. I also like their plastic handles which don't heat up like crazy when pan-roasting.
