I love good old fashioned Reubens. The corned beef must be very thin and not fatty, and the cheese must be melty and slightly crisp on the overhanging edges. And of course lots of Russian (thousand island?) dressing on the side to dip my fries in!

That's a tough one, Kbear. I was going to say ham and cheese, since it's my go-to sandwich, but then I click through to answer your question and you're all like, "Bahn mi."
I think I'll stick with ham and cheese, though. Boring, yes. But I could probably eat an HnC every day and not get tired of it.

An Italian sub, overflowing with tasty cured meats, provolone, pickled hot peppers, fresh lettuce tomato onion, and oil and vinegar on a chewy sub roll, preferably with semolina flour all over the outside that will get on everything and make a big delicious mess while I try to eat it. With a small bag of chips on the side.
Banh mi is a close second.

ThatGirl153: Bánh mì, sometimes also referred to as a "Vietnamese hoagie", is a Vietnamese submarine sandwich, made with a French-inspired baguette. It is made up of thinly sliced pickled carrots, daikon, onions, cilantro, choice of barbecued pork, paté, chicken and other meats; there also exist vegetarian versions of this item with tofu taking the place of meat. The contrasting flavors and textures of the sandwich — as well as its relatively low cost — make it a popular dish. [from Wikipedia]

I have two:
1. Tuna Melt. I absolutely love tuna mayonnaise. It's a bit embarassing, but true. I like it on seven grain toast, with cheddar cheese or jarlsberg, and a slice of tomato under the cheese.
2. Smoked tofu with watercress, tomato, cucumber and red onion on seed bread. This is perticularly nice with vegan mayonnaise and piccalilli.

I think mine would be a grilled roast beef w/ cheese, pickles and a thin slice of tomato. With a little bit of mustard and mayo on the bread while it's being toasted.... yes.... sounds weird, but oh so good.

I second the Rueben, although I prefer mustard to Russian dressing on my Ruebens. David Rosengarten did a great segment on the Rueben on his show Taste... gosh, that must have been 10 years ago or more.
I'll have to ask him about it.

There's this place on West Portal in SF, which makes the best submarine sandwiches EVER

This is the place Quiznos wanted to be, but FAILED.
It's extremely popular with high school sports teams (a jock with a locker near me reccomended it when I was like 14) and it's the bread and the sauce, combined with the toasting in the salamander that make it Delish!
NYminknit at 4:23PM on 01/19/07
Grilled cheese on sourdough with a good muenster, really good aged extra sharp cheddar, and of course, a fresh tomato slice.
Then you serve with tomato bisque and it is the best meal ever.

croque monsieur--at least I seem to order it a lot lately.

My absolute favorite is the bacon, tomato and avocado sandwich. But ONLY when every ingredient is perfect.
The tomatoes must be homegrown and vine ripened to a brilliant red perfection. Unfortunately they are only available about three or four months out of the year.
The bacon must be thin and crisp and Oscar Mayer center cut.
The avocado needs to be soft and ripe. I prefer the Fuerte variety, but Bacon is alright. Most of the time only Hass are available, though.
The bread is very important, too. For the perfect sandwich the bread needs to be what my grandmother made my first sandwiches with, Wonder Thin Sandwich. (Yes, I know this bread has no flavor and virtually no nutritional value. No, I don't care.)
The mayo must be Best Foods/Hellman's, the salt has a little wiggle room in it's style, but the pepper must be black and straight out of the pepper mill.
The layers have to be bread slathered with mayo, then avocado, a little salt and pepper, and the bacon must be placed vertically on the sandwich. The tomato and a bit more salt and pepper on the other slice of mayo'd bread. Then you bring the two halves together, squish it down a little, and then cut it in thirds, horizontally. Also, in order for the sandwich to be absolutely perfect, everything needs to be cut to fit the bread-- exactly.
Anal retentive sandwich making? Why yes, yes it is.

Homemade chicken salad on toasted rye bread with iceberg lettuce.
BreadBox at 8:39PM on 01/19/07
cheese--cheddar, manchego, maybe gruyere--on black bread with grainy mustard. that's it.
jscheck at 8:39PM on 01/19/07
I have to agree with kbear919 - the banh mi is, in my opinion, the perfect sandwich. And generally costs only $2 at most places! I like getting mine from the Cam Hoang shops in Oakland Chinatown. I haven't gotten one in a while...
toastykitten at 9:09PM on 01/19/07
Anything on gluten bread. Getting close on recipes with the GF breads now, though. Although I have to admit that I crave a simple tomato, fresh basil and fresh mozz panini. I made at least 1 every weekend for like 4 years before going GF.

Amish style chicken salad on white roll with pickles
Chicken Parm toasted in the oven to mke the cheese melt
Italian hoagie oil and vinegar and sharp sharp provolone
JerzeeTomato at 2:29AM on 01/20/07
Albacore tuna with mayo, celery, onion, grated lemon peel, dill on sourdough rye, not grilled, cold - with chips on the side. At least today. Does a burger count as a sammy? If so, ground sirloin, salt and pepper, charcoal grilled, on a sourdough roll. Nuttin' else.
dksbook at 12:21PM on 01/20/07
Day after Thanksgiving, leftover turkey, stuffing and homemade cranberry sauce. BLT with avocado is a distant second.
stanley fatmax at 1:58PM on 01/20/07
Kbear I'm with you on banh mi, but a close tie for me is Tony Luke's roast pork sandwich with brocolli rabe and sharp provolone. What a happy, garlicky combo the shaved roast, cheese and greens make The first time I had it was at the NYC branch of this famous Philly cheesesteak joint. Geez, now I'm jonesing for one!
Joe DiStefano at 4:32PM on 01/22/07
I'd say one close to what stanley fatmax chose: thin sliced turkey on a good bread with cranberry sauce and a horseradish spread. Or, a really good egg-salad on white with lettuce and chips on the side (if I don't have chips, I can't even think of eating a sandwich!).
cedarbend at 7:29PM on 02/03/07
Mmmmm.... banh mi!
But for home-assembled sammy-liciousness, I love a thick-sliced tomato, spicy grainy mustard and dill pickle sandwich on homemade multigrain bread.
