One pot meals?

I'm in New York, but all my kitchen stuff is on a moving truck somewhere between here and San Francisco! I've got a 2 1/2 quart covered sauce pan, a cutting board, knife, and basic untensils. Any suggestions for some tasty one pot meals? Chili is on my list.

Plov, a buharian (southern russia) rice dish, made with Lamb onions carrots rice. Excellent meal cooked in less than an hour. Here is a recipe that I would follow:

Hungarian food is always a great place to turn for one pot meals. They've got whole cookbooks devoted to "kettle cooking", a large cast iron pot, hung on a sort of tripod, heated over an open fire.

Goulash, Porkolt, Paprikas, etc. are all great one-pot dishes. Just don't skimp on the paprika! Pride of Szeged is probably the best widely available variety, but you can probably do better at local hungarian ethnic groceries - if your town has one, that is.

Jambalaya is one of my favorite one pot meals. I don't follow any one strict recipe and just wing it using whatever chicken, shrimp, ham, etc. I have on hand. Mmmm...spicy!

I love homemade Chicken Pot pies. this is clever (something i never thought of) Instead of making whole pies, just make the filling and when you are ready for a meal, just take a Pilbury already made crust, cut a circle with your oven safe bowl, pour in the filling and place said circle of dough on top and bake til crust is brown.

My FAVORITE one-pot meal (and one of my top-5 favorite meals of all time) is Japanese-style curry. So incredibly easy to make and utterly addictive. I can't stop at one bowl. Or two bowls—I often end up eating half of a third bowl before I can't put any more in my stomach.

Basically just an onion, a potato or two, and a couple carrots mixed with a special sauce mix you can get fairly easily at Korean-owned delis and often times in the "ethnic" aisle of your supermarket. The most common mix is S&B Golden Curry. You can find more variety in House Curry products, which seem to appear mostly in the Asian-specialty-food stores.

PS: These curry mixes are a bit high in sodium (34 percent RDA), maybe a little high in fat, and has MSG in it (not that I care about MSG), but the dish is soooooo good.

These are all great suggestions! I love chicken pot pie, and the single serve idea is a great one.

Chicken and dumplings!

- Beef potato-barley stew
- Mac cheese with broccoli (toss in raw broccoli with noodles at 4 minutes, turn off heat and drain water at 7 minutes)
- Risotto of any stripe
- Pot roast w/potatoes, onions, carrots, etc
