'Iron Chef America' on the Food Network

They know the secret ingredient beforehand, right?

Also, if Julie Chen, Mo Rocca and other non-food types can be on the panel, I'd like to try to get on as a judge myself - doable?

By the way, saw Ed Levine as a judge recently (Citrus battle - yeah, I agree, way too broad), and he did a splendid job filling the Jeffrey Steingarten seat, minus the necktie stains.

as i understand it, they're aware that there are two possible choices, and prepare for both.

I thought it was closer to three ingredients, but the idea is the same. I'm not sure who you have to know to get to be a judge, but I imagine it's not easy.

@ onthestereo: is that the way it is for Iron Chef Japan as well? I thought they didn't know what the ingredient would be until it was revealed.

According to Wikipedia: "In each episode, chefs have one hour to cook a multicourse meal around a theme ingredient that must be present in each dish. Before the actual taping, the chefs are given a short list of possible themes, allowing the producers of the show to get any ingredients that may be needed."
