How do you cook?

Do you improvise your meals or follow recipes? What has been successful for you, and why?

I improvise, although I do read cookbooks for inspiration.

I use a recipe as a base. I always follow it faithfully the first time I prepare it (though I'm inclined to add more onions and, especially, more garlic). But after that, anything goes. If I make a mess of any alterations, I'm sure to remember. My best recipes are those that I've modified over time, taking the source and altering it to something all my own.

I use recipes for ideas and then take out stuff I don't like (or don't have) and add things that I do. I Tweak the amouts of herbs and spices and flavors to my liking. The good news is I am a pretty good cook and things usually come out pretty well but the bad news is if I make something especially yummy I can't duplicate it. I also can't bake worth a darn because I HATE to measure!

If it's something I've never made before, I will consult five or six recipes, then go my own way. Most meals, however, I just wing it, based on what looks good in the market. This year, I'm writing down every day what I made for dinner, as some delicious dishes have just gone by the wayside through my own forgetfulness.

I have my standard meals I make that I don't need to follow the recipe anymore. Then once in a while I try something new, following a recipe that looks good. If I like it, it gets added to the "rotation".
