Question of the Day: What's your Favorite Brand of Knife and Why?
I'm sure we all have our "go to" knives ... personally mine's nothing super special. It's a 7-inch chefs by Henckels. I know, to each their own. Balance, weight, blade, sharpness are all important. What's your favorite and what makes it the best?

My favorite is my Wusthoff 8" Chef's knife. I'm also quite fond of both my paring knives, one also from Wusthoff and the other from Cutco. Yes that Cutco. It was relatively inexpensive, holds a good edge and has a killer handle...

I almost posted this *exact* same question yesterday, when we were talking about this at work. I like the global chef's knife for herbs and lighter vegetables, and the wusthof for heavier vegetables and everything else.
My fiancé uses the Global paring knife for *everything*, because she just likes that it's small.

I have several favorites: a 10" Global chef's knife; two Kyoceras, a utility and a vegetable cleaver, that a friend brought me from Tokyo (thanks, Emil!); an old carbon steel 8" Sabatier, inherited from a late pal, that takes a wicked edge. I could go on...

I use my Henckels 7" santoku knife for just about everything. The 3" paring version is fabulous for small jobs.

Dexter makes a "tiger edge" knife that is perfect as it will easily cut through the hard crust on Italian bread. The blade is stainless steel too. Its number is SG142-8TE and it is not nearly as expensive as the European knives. (Dexter is made in the USA.)

This may sounds like blasphemy but for a joke I ordered the Miracle Blade set. It replace my Chef's knife and others. Great set. No joke!

@JeffO: I LOVE the Miracle Blade. My parents bought a set sooooo long ago -- while I was still in high school (1990 to 1992). They gave me the "additional Miracle Blade at no extra cost!" and I took that thing off to college. I've had it since and it's still sharp as hell. I use it all the time.
