Pernil is awesome!

I recently discovered mini-roasts of wild Boar at Gourmet Garage (they're from Dartagnan) and they're trotters down my new porky favorite.

I cook them low and slow (275) in a dutch oven, basting every half hour for 2 hours with the herby red wine marinade and serve with polenta or taters.

utterly, fantastically, purely porcinely, juicely, tenderly DELICIOUS.

Bacon....mmmmmm...... Recently found this amazing stuff in a coutry store upstate. Need to track that down. Mmmm.....bacon.

Does it really get much better than bacon?

Bacon is great, but for a special occasions, I love roast pork buns for dim sum.

Representing the east coast, I say Pork roll. Taylor Pork Roll. If you have not had it you are missing out big time.

Pulled pork bbq sandwich with a side of spicy hot pork rinds and an ice cold beer!..mmmm.......now i'm hungry!

Pork has become one of my favorite meats. My favorite pork products are bacon, pulled pork bbq sandwiches, the lomito sandwich at San Antonio Bakery No. 2 in Astoria, and that super tasty pork at Momofuku.

Who/what is "Pernil?" I second the Goetta, also love scrapple and true Smithfield ham. If you dan find some Berkshire pig, you're in luck!

Banh Mi, bacon (on occasion), pork buns, and my dad's Chinese bbq roast pork - it's finger licking good and tender!

I would really love to see a feature on how to cook pork without completely drying it out. Also, I second all the bacon and bbq pork bun favorites!

for the unintiated pernil is roasted pork shoulder it is from the carribean, mainly puerto rico and the dominican republic, an excellent, cheap meal when you are cooking for 6 or more. If anyone would like a recipe for it I would be glad to post mine.
