Question of the Day: What's your Favorite Brand of Knife and Why?

I'm sure we all have our "go to" knives ... personally mine's nothing super special. It's a 7-inch chefs by Henckels. I know, to each their own. Balance, weight, blade, sharpness are all important. What's your favorite and what makes it the best?
