Try this:
The Recipe: Texas Wiener Sauce

12 oz Ground Beef
½ each Minced Onion - Chop the other half to top the dogs.
2 tbs Chili Powder
1 tsp Cumin
2 tsp Paprika
Salt and pepper to taste.
Water as needed (Approximate 2/3 cup)

1. Brown the ground beef.

2. Stir in all the other ingredients except for the water.

3. Thin with water until reduced about 50 percent.

Haven't used this recipe yet. Let me know how it came out if you do.

I always preferred Hiram's. They use a Thumann's dog made especially for deep frying. The same dog is used at Rutt's Hut, Libby's, Johnny & Hanges, Goffle Grill, Pappy's Diner, and countless others. The key is to get this dog cooked sufficiently. At Hiram's ask for one "well". The Callahan's dog was a beef and pork blend made by Sabrett. The Hot Grill also uses this dog, but in a smaller size. The Windmill is another place using the same dog. But they griddle fry, rather than deep fry their dogs.

Actually ruts hut uses Thumanns in the orange packageing sold only by distributers.Im looking for the chili recipes. Thanks to all who responded.

The orange package Thumann's are the ones made especially for deep frying. The ones in the blue package are the grillers (my favorites) and those in the red package are the all beef dogs. You can get the orange package (deep fryer) dogs by going to a pizzeria or sub shop that uses Thumanns coldcuts and having them add a package of dogs to their next order. This is what I do. As far as getting an authentic recipe from one of these places, good luck. The recipe is usually only known by the owners.
