Ideas for building around leftover Indian?
This is probably an apt topic for most delivery leftovers, but I think that Indian presents the biggest challenge. Certainly, you'll likely need more rice, and I've tried the ethnicky Near East brand's coconut-ginger version with Indian. Also, a room-temp cucumber salad made with Indian-type flavorings also agrees with this food. Any ideas?

If it's chicken and boneless, bung it in with a load of soup vegetables to curry up and meat up your soup. Liquidize et voila. NB. Parsnips make for good curried soup, IMO.

I think that Indian leftover breakfast are the best. You can pretty much mix everything up and make a fantasic omelette out of it, or as I call it, the Chanamasamelette.
