Favorite Wine Bars in NYC

There are more than Starbucks on the UWS now. Extremely trendy to open, I miss the days when the only wine bars were The Room and some early West Village places.

Nevertheless, what are your favorite wine bars in NYC taking into account selection, price and food?

Matching Wine with Food?

Which wine goes with:

Pork
Beef
Lamb
Poultry
Fish
Shellfish
Vegetarian

I always have Pinot Grigio with chicken or seafood and merlot with any red meat, but I don't know much about wines. I never spend more than $20USD; will this hamper my attempts to match good wine with my meals? Please weigh in.

Global Warming and Wine

Talk to any winemaker today, and they will tell you climate is a huge factor What that change is, is still up in the air. If it really is catastrophic and not just a blip, vintners will definitely change how they plant and where they plant.
There is however a lot more at stake here than wine. If global warming is a reality, the climate change is going to affect every way we live our lives -- our ecosystems, our economies, and our livelihoods. Global warming may become a worldwide catastrophe, but at least the wine should be better.

substituting for wine in recipes

i don't cook with wine. what can i use to substitute when sauteing mushrooms?

Urgent! Recs for wine pairing with ham...

Red or white? Drink what you like? We've done chards and sav blancs with ham (honey-baked style) for so many years in the past, I'm thinking of doing a pinot noir or merlot this time. Is that too radical? We have a decent wine cellar, so I can pretty much grab anything at this point. We love wine, but are definitely not in the "wine snob" group.

With the kind of sweet/spicy flavors on a honeybaked ham, am I right-on or way-off with what I am proposing to pair with it? What else would you oenophiles recommend?

Cooking with leftover wine

When I woke up and wandered into the kitchen this morning, I realized there was an open bottle of sauvignon blanc, with about a glass's worth of wine still in it from last night. It had been sitting out, unsealed, for the entire night. Now, I was planning on making a roasted pork loin for some friends tonight, and I thought, why not use the leftover wine as a basting liquid? However, I've heard conflicting advice on this subject.

On the one hand, the wine is going to be cooked, used to baste a garlic-rosemary pork loin, not in a sauce or anything, and thus will not be a major flavor component. And the alternative is to just pour it down the drain.

On the other hand, there's the "don't cook with a wine you wouldn't drink" rule; cooking concentrates the flavor of wine, so if the wine is no longer drinkable, it will hurt the dish more than help it.

1968 Soave - Swill?

I found a bottle of 1968 Barone Ricasoli Soave in my uncle's basement. I don't know much about wine, but from what I've read soave is best when under two years old. Any chance at all that something wonderful has happened to it in 39 years or shall I use it to kill weeds?

NYC Help: Wine and Cheese in Hell's Kitchen?

In October, I was up in New York City for a visit. We had dinner with friends of the family, and their son is living in Manhattan. After dinner, he steered us to a wonderful wine and cheese bar in Hell's Kitchen, but I can't remember the name of it. The focus was primarily on the cheese, with the wine list created to complement the selections they had - overall, a very lovely experience! Anyone have any ideas?

Anyone have a good mulled wine recipe?

I feel winter coming on.... Last Christmas, I had mulled wine for the first time and it was delicious and warming. Anyone have a good recipe?

Wine of the month club: how to choose?

Hi, I'm looking to join a wine of the month club sort of thing, but when I did a search I found quite a large number of clubs. I was wondering if anyone had any experience with clubs or had recommendations on how to choose one? I live in Virginia, and saw that one club already couldn't mail to me! Any help would be appreciated!

Favorite Wines?

What wines do you return to again and again? I buy Yellowtail Shiraz quite often, but I really dig Sebastiani's Merlot and Ponzi's Pinot Noir Reserve.

Do speciality wine glasses (such as Riedel)make a difference?

Does laying out the money (and bar space) for specialty wine glasses make a difference to the average wine drinker? I'm a wine novice but I'm enrolling myself in "self-taught wine appreciation 101." Will my not-too-sophisticated palate detect any subtle difference between a nice Cabernet Sauvignon sipped from a regular wine glasses and one from a Riedel Vinum Bordeaux glass?

I love any excuse to go shopping for stemware but the next earthquake to roll through L.A. is going to produce one heck of a glistening, crunchy mess around my bar!
