Honey Help.
The Los Angeles Times food section (online) often offers beautiful recipes. I was hoping to try my hand at this recipe:

It calls for wildflower honey, preferably free range. Will it really make a difference what kind of honey I use? I read that different honey's have very specific tastes, but in terms of this tart- can I just use the jar of Goya honey (comb included) that I just purchased?
Has anyone developed an alternative for "cream of --- " soups?
I often come across recipes that sound simple and tasty for basic weekday meals, but they so often rely on the ubiquitous can of cream of X (chicken, mushroom, etc).
I'm trying to avoid processed/high-sodium foods where possible. Has anyone come up with a fairly simple substitute that can fill in for the Campbells?
I'd like to be able to make a casserole without necessarily having to make a bechamel.

Butter Flavored Shortening
I have a recipe for molasses cookies that calls for 3 cups of butter-flavored shortening. I don't want to use that (actually, I don't have any; I never buy the stuff). Can I substitute 24 ounces of room-temperature unsalted butter? I hate to waste my recent gift of molasses in a runny, burnt cookie. Thanks for the advice.
Whip cream substitute?
I need help with a whipping cream/heavy cream substitute for this recipe.
Here's the catch: I'm lactose intolerant, and can't have milk unless it has been boiled. (Yogurt or cheeses are okay.)
Any suggestions?
Need a decorative substitute for coconut
You know those cakes in the shape of lambs that appear at Easter? Well, I bought a mold last year when they were on sale after the holiday, and it's getting close to the time when I'll be using it.
Most of the cakes I've seen have been covered in white coconut, to simulate the wool. But I hate coconut. Despise. Ptui. And hubby's not a big fan, either.
Any ideas what I could use instead? And no white chocolate curls. One person who will be consuming the lamb with us doesn't like chocolate of any type.
It doesn't necessarily have to be white. But it has to be edible and compatible with the cake. So, no grated parm :-)
Please help me find a mayo subsitute!
So my boyfriend hates mayonnaise, but loves sandwiches. If I have to see him eat another sandwich soley consisting of meat, cheese and pepper- I'm going to throw up. He's open to making his bread moist, but he refuses mayo. Does anyone have any suggestions as to what I can try as a mayo substitute?
Substitute for Sherry?
I'm making Bourdain's mushroom soup (from the email a few days ago) and I don't really want to buy sherry for it as I rarely use it.
Does anyone have any recommendations for a substitute? Obviously it adds a lot of flavour so I'd prefer not to substitute broth.

6 tablespoons butter
1 onion, thinly sliced
12 ounces button mushrooms, halved
4 cups chicken stock
1 sprig parsley
2 ounces sherry

Butter Substitutes
I am looking for an alternative to butter. I don't use it often but when I do I would like to use one of the healthier versions that are all over the shelves these days. The one I am thinking about is SmartButter. Any thoughts on this product or any other suggestions? It is mostly for toast or pasta.
No Substitute
I recently found out you really can't substitute european basil for thai basil in a green curry. The same weekend I also found you can't substitute cumin seeds for caraway seeds in a czech goulas.
Which ingredients are vital for you? have you had any disasters where you tried to substitute something else?
