Chinese Dumpling and Soup Technique
My daughter's friend visited us for dinner the other night. It was great fun, because she brought some dumplings she and her mother had made (Chinese dumplings - the family is from Southern China) and wanted to show us how to cook them, as my daughter had mentioned how much she loved dumplings.
As I seem to not be able to keep this within a 1500 character message, this will be continued in the next post. :)
What's your secret to the best tasting potato soup?
Potato soup is one of those universally popular comfort foods with a zillion variations. There are creamy, chunky, bisque, loaded-baked style, one's with bits of pork, potato soup to satisfy a vegetarian....Made with or without dairy...half&half provies even more richness. Can be seasoned with herbs or spices. Toppings abound....cheese, crisped potato skins, bacon bits...Potato soup can be rich enough to stand alone with only needing a salad to complete a meal. Served cold as an appetizer is another option. What's your secret to a killer potato soup?
Thanksgiving Soups
This Thanksgiving I'm in charge of the soup course, but I am feeling sooo uninspired. The only recipe that has caught my eye is one on epicurious for Creamy Fennel & Potato soup. Anyone care to share their Thanksgiving soup recipes?
Freezing soup
(Sorry--I didn't understand I needed to add comments.) I love to create big pots of soup for winter meals. But I've yet to understand why some freeze beautifully, while the flavors, textures, and consistancies of others are pretty much destroyed by freezing.
Most of the soups I make in large quantities are vegetarian and uncomplicated. Ingredients can include lentils, beans, or peas; a variety of fresh or frozen vegetables; various herbs and spices...you get the picture. Any thoughts? Rules of thumb?
ISO Good Soup joint in the East Village
My boyfriend works from home on 3rd Ave and St Marks. He's a fan of various soups and stews: lobster bisque, chili, tortilla soup, clam chowder, and more. There's not a Soup Man, Pax, or Hale and Hearty in sight. What to do? Can anybody recommend a good soup joint, especially for to-go or delivery?
