slow cooker stock

Thanks so much to all who wrote about chicken stock in the slow cooker...such a great idea. A "why didn't I think of that idea". I did a chicken stock yesterday, 10 hours in the slow cooker and then strained and simmered on the stove for another 1.5 hours to reduce. I had a very nice gelatinous 8 cups of stock this am. Currently in my mini muffin tins freezing.
I have some shrimp shells and lobster legs in the slow cooker now, hopefully I can do a seafood stock the same way.

Slow Cooker Go-To Recipes

I just received an All Clad Slow Cooker as a shower gift! Does anyone have a great go-to slow cooker recipe? I have a few up my sleeve but I'd love some new ideas! Please keep in mind that my fiance and I are watching our waistlines for the wedding!

Vegetarian Crock Pot recipes

I've just bought a 4 quart slow cooler on sale, as I've heard positive things about slow cookers and I once had a friend who raved about them. Now I'm looking for recipes. I searched the Serious Eats site and found a Moroccan Jewish dish in comments (November 2007) and I will definitely try it some time, being Jewish. I know that baked beans are an option.

Other ideas?
Can I cook soup in it? I'd use it for the tortilla soup that I'm making for Friday evening (see my previous post) .

What is/are your favorite crockpot/slow-cooker dish(es)?

Everyday crockpot and slow-cooker dishes are generally beef with potatoes, carrots and onions, or a slow-cooked corned beef with cabbage added later, or, as we're having this evening, chicken and dumplings.

Do you stick with these "standards"? If not, what is it you like to cook in these beasties?

What creative dishes can you make in the crockpot?

It seems the only crock pot recipes I have come across lately are for pot roast or pulled pork. I'm sure the slow-cooker can do wonders with other dishes.

Slow-Cooker Recommendations?

Hey, Serious Eaters: I'm going to lazyweb this and ask you all ...

I want to purchase a slow-cooker for the Serious Eats office. I have a small Crock Pot at home, but it's the tiniest one they make and insufficient for versatile slow-cooking artistry. Does anyone here have a recommendation as to brand/model? Thanks in advance.
