After reading and drooling through the thread on favorite soup & sandwich combos, I got curious about how you all make your grilled cheese sandwiches. Because I'm still cooking for the junior high set here (food loyalists if ever there were any), we can't deviate from Kraft sliced American (the individual-wrapped slices are the worst, IMO) and potato bread done up fast on an old cast iron pan with real butter, pass the ketchup, thanks. I need inspiration: how do you make your adult versions (assuming you do.......) ??? What are your favorite bread-cheese-combinations?

Hoagies, Subs, Whatever: Recipe for Chewy Crusty Soft Rolls?

Yes, I want all those things. I love a roll that is crusty/chewy on the outside, where you kind have to use your teeth to tear off a bite, but not so much you break a tooth. Definitely not ciabatta-y or baguette-y. I want 'em light and soft on the inside, but not so much that it gets soggy if used for meatball, sausage or pulled pork sandwiches (I'm doing meatball this time, but I do all these things pretty regularly). Definitely not too dense and/or doughy, and not like a burger bun.

Around here, the ones I like are usually sold as hoagie or kaiser rolls, but let's face it... what you'll actually find in the bag when you get home is totally random depending on where you bought 'em.

Making these tonight, so a sponge starter is fine as long as it's only about six-hours max. I don't have time for a longer 12- or 24-hour version this time around. Any suggestions?

Does Topping Order Matter?

I'm convinced the order my toppings are layered on my sandwich influences my sandwich consumption experience.

I personally have a particular affinity for my cheese to between the slices of meat and the dressing to be spread on the top slice of bread. Sometimes things vary depending on what ingredients are included in the sandwich, but under no circumstances may the cheese come in contact w/ the vegetable or dressing nor may the vegetable w/ the dressing.

Does anyone else find themselves w/ sandwich topping order peculiarities?

Please help me find a mayo subsitute!

So my boyfriend hates mayonnaise, but loves sandwiches. If I have to see him eat another sandwich soley consisting of meat, cheese and pepper- I'm going to throw up. He's open to making his bread moist, but he refuses mayo. Does anyone have any suggestions as to what I can try as a mayo substitute?

First, I borrowed a panini maker.

Peach Melba Panini

Spread thick layer of marscapone cheese on one slice of walnut bread
Spread raspberry preserves on other slice of walnut bread
layer on thinly sliced fresh peaches
lightly butter outside bread slices
toast in panini maker until oozing goodness

Consume!

At this moment they are my favorite sandwich on the earth. The savory pate, the crunch of the pickled veggies the fresh zing of cilantro the savory mayo, the hint of maggi, and pork fat!
