Waffles vs. Pancakes

Cooking with kamut flour?
I had pancakes made with kamut flour and they were really good. Does anyone know anything about cooking with kamut flour or have any recipes? Thanks!
Egg Pancakes?
Help! My husband has been craving a childhood dish and I cannot find my recipe for it. His mom made "egg pancakes" and she gave me the recipe many moons ago, but it is lost and I have not made it enough times to have it memorized. I was never very good at making them in the first place! She passed away four years ago and my father-in-law cannot find her copy either. I know they were a thinner type pancake and nothing I have found online seems right. We are in Michigan and I don't know if it is a regional or cultural dish, but my family never made these growing up. Anyone out there heard of these or has a recipe? Many thanks in advance!
Hotcake recipe and the griddled cake confusion
I just got back from NC and we had a fabulous breakfast one morning at a local eatery (Big Ed's downtown Raleigh). We ordered the hotcake. Spelled just like that "hotcake" This was one pan sized (10 inch by my estimate) large cake. It was light and full of air and was heavenly.This was NOT a pancake, hoecake or sourdough anything.This was light, ethereal, and I was in love.Ok people I have to make this so lets dig out the recipes.
Pancakes versus French toast — your favorite?
The diner down the street makes great French toast on Sunday mornings (I make the distinction because I've had it on different days at different times, and it's inconsistent). The chef also has a great pancake recipe. So, many times it's tough to choose. Wish they had a plate with both.
What would be your selection? (It's OK to say "oatmeal," too.)
