Healthy cooking oil

I hear/read all the information about how "healthy" olive oil is but when I look at the saturated fat content I am concerned about clogging my heart! Also, most comes from europe/mediterranian region - no offense but that is along way for my food to travel. What else is out there, besides canola oil, that is healthy and versatile in my kitchen and produced here in the States?

What's the difference in oils?

I am a little confused on what is the best kind of oil to use for different kinds of cooking. Extra virgin olive oil, peanut, canola, vegetable, etc. And does anybody recommend a particular brand?

Which oil do you like to use?

EXCLUDING olive oil and fancy schmancy oils such as truffle or walnut oil etc....which oil do you turn to and why?

Deep frying: OK to reuse oil? What to store in,esp when it's hot

I would love tips on whether it's okay to reuse oil for deep frying (since you usually need quarts), best oils for deep frying (Chinese food, fried chicken, beignets) and what people store the hot oil in when they are done and need to put it somewhere for next time!

What kind of oil do you use for cooking?

I use olive oil and canola. I have grape seed oil but I am not really sure what to use it for.

What to do with the fryer oil?

I have a basket type deep fryer that I never use. The problem I have is it takes so much oil to fill it that it seems like a complete waste to fry up one dinner and then throw the oil away. I tried saving the oil in the fridge once but I read that it's not healthy to re-use fryer oil. Does anyone have any suggestions for getting more use out of my fryer without being so wasteful?
