Matching meat with cheeses?
I know ham and cheddar is a good match, but what about other meats, seafoods and poultry? I'm attempting to make a lamb confit & potato torte this weekend (it's rather labor intensive) and I was thinking of a creamy cheese to put on the potatoes. Any ideas, or would that be too rich?? Discuss.
Should meat eaters kill what they eat?
Yesterday I killed a pig. Obviously it's impractical to kill everything we meat, but I think it's something all meat eaters should try to experience at least once.
meat from humanely raised animals
I have been trying to avoid meat from feedlot animals. This limits our restaurant/menu choices, when we eat out. I have 2 questions:
1. are there restaurants out there who offer meat from animals that were treated humanely, and how do you find them?
2. if I see "exotic" meats on the menu (like bison or venison), can I assume that they have been raised humanely, or are there now feedlot-type places for deer, also.
Do you know where your meat really comes from?
Factory farms and industrial feedlots are polluting the earth and our bodies. Do you know who raised your meat and how they did it? What are your favorite sources for 'ethical' protein? Are you willing to chose the 'vegetarian option' over 'commodities meat?'
Hot dog or Hamburger?
With Labor Day barbeques right around the corner, if given a choice, what would take, a hot dog or hamburger?
I choose the hot dog, if natural casing (in Detroit, only Kowalski or Alexander Hornung will do), slightly charred, topped with yellow mustard and diced onion. Otherwise, I will take the hamburger!
What are the best ratio's for fresh ground burgers?
