the best pizza
I am sorry but you evidently have never eaten at a small restaurant in Allentown Pa. called Paeso Mio, they have the absolute best Italian food I have ever eaten. As you wrote about a plain slice of pizza, I could only think of their most delicious sauce, the best cheese and their onforgettable crusts. You truly have to try this one. I am totally organic, rarely enjoy dining out as I am so very lucky to have the best beef and milk raised by a country farmer who absolutely loves his cows who raises their food himself. But Paseo Mio is my choice, no one can come close to their sauce period. I am anxious to hear your verdict.
Gnocchi
i'm thinking of tackling gnocchi. here are some questions:
do i really need a potato ricer, or can i use a food mill?
what kind of flour is best? what kind of potato?
what sauce is best?
Debate: Parmigiano-Reggiano -VS- Pecorino Romano
Personally I was raised on Romano cheese and prefer it (newsflash right?)
But will use Parmigiano on and off and with the Romano.
There seems to be an italian grating cheese debate fermenting. So tell us which do you prefer? Why?
Tootlach, anyone?
I have a friend who raves about this purportedly traditional Italian dish called "tootlach" (he swears he spells it correctly) that his family makes for holidays. From what I can gather, it's some sort of large dumpling, almost a loaf of bread, that is rolled with cheeses, mushrooms, greens and other fillings and then almost braised in a rich tomato sauce. Regardless, it's supposed to be amazing and I can't ever find any recipes or reference to it online.
Has anyone ever heard of this?
(And, yes, I could just ask my friend, but what would be the fun in that?)
Prix fixe lunch at Del Posto
I remember reading somewhere about Ed Levine's amazing discovery of a really fabulous prix fixe lunch at Del Posto--Ed if you're reading, or if any other community members recall--please do tell. How delicious and how affordable is it? I did a search on SE's site and couldn't find it. Thanks!
Why are lattes bad after dinner but cheese and ice cream ok?
I'm trying to reconcile the Italian tendency to avoid milky coffee drinks after big meals with the tendency to consume cheese and milky desserts. Discuss!
