Swordfish Ideas

So I ended up with some swordfish. Long story. I've never liked it because it's so dry. Now it's time to try again. What do Serious Eaters suggest for someone who doesn't have a grill?

Help me with my weekday dinners

I'm really into cooking, but for the most part I only cook and eat one major meal a day: dinner. Lately I've been getting very bored with my nightly dinners. I feel like I'm eating the same things over and over again.. The meals that are normal at my house include roasted potatoes with a pan seared meat, lots of pasta dishes- especially lasagna, chicken adobo, chilie, stir fry. They are by no means "boring" dishes, but I'm getting sick of eating them. What are normal nightly dinners at your homes? What dishes do you make often? I'm looking to switch things up and I want ideas from other people who love to cook.

Fresh Ricotta!

I'm lucky enough to have fresh, whole-milk ricotta sitting in my refrigerator. I used some last night for a pasta, but I'd like to make something with the remaining 8 ounces. Any creative ideas would be greatly appreciated!

Is anyone involved with a gourmet cooking group?

My SO and I have been thinking about this for quite some time, but are not exactly sure how to go about it. We just moved last year and don't really have a lot of social contacts or dining companions as yet. We would, however, enjoy meeting some folks who are also passionate about cooking and have some of the same culinary predilections as ourselves. Any suggestions?

Ina Garten (the woman can cook)
Julia Child's old PBS show
Jaques Pepin (who through the power of television taught me how to dice a large Spanish onion in under a minute - thus impressing all my friends)
Jean-Georges Vongrichten - (my favorite chef in the entire known universe; I go to his restaurants at every available opportunity)
Sara Moulton (not the greatest cook in the world, but one who explains things clearly in a way that makes things accessible)
David Rosengarten (maybe a little prissy, but he breaks things down piece by piece until you've got it)
Alton Brown (nuff said)
Masaharu Morimoto (clearly, he'd need an interpreter, but oh my goodness, what we could learn from this man)
Thomas Keller (well spoken, brilliant chef)

What should I make from Bittman's "How to cook everything..."?

I just purchased "How to cook everything...". I'm excited to get cooking but I'm overwhelmed. I've looked through the entire book several times but can't figure out where to start or what to try. My friend suggested I start at the beginning and try everything once. Any suggestions? Ideas for a meal? Help!

What would your restaurant be?

If anyone has been watching Last Restaurant Standing on BBC America, you may have noticed that there are some really interesting restaurant concepts being tauted, including a really great-looking Ghanian one that I would like to try.

So, if you were to open a restaurant, what kind would it be and what would you offer? Casual? Upscale? Fast food, even? And if you are really imaginative, where would you have it?
