My favorite brunch recipe!!! Minced Beef on Toast

It's the Navy version of Sh*t on Shingles, but I simply love this. You are supposed to put it on toast. But when I was working for the Navy SEALS, it was put on top of hash browns, with poached or baked eggs on top.

1 1/2 lbs ground beef
2 medium onions, chopped
cooking oil, if needed
salt and pepper
5 tablespoons flour, approximate
1 (16 ounce) can whole tomatoes, diced
5 1/2 ounces tomato juice
2 cups hot water, approximate
1/2 teaspoon ground nutmeg, to taste
1/2 teaspoon sugar, to taste

1. Crumble the ground beef into a skillet and brown with the onions.
2. If beef is very lean, add a tablespoon or two of cooking oil.
3. Salt and pepper to taste.
4. Add flour, one tablespoon at a time, stirring and cooking each spoonful, before adding the next.
5. The flour must be cooked to preclude a starchy taste through out.
6. Add enough flour to absorb most of the oil.
7. Stir in the tomatoes and the tomato juice, followed by the water.
8. Allow to simmer on low heat to thicken.
9. Adjust consistency as necessary.
10. Add nutmeg and sugar and adjust to taste.

Do you love ripe melons? Which are your favorites?

I've had many with zero taste (especially honeydew), and others that were fabulous in one place and just terrible in others - cantaloupe comes to mind. North Carolina's are to die for. Some of my favorites are French Charantais melon which I only tasted once and fell in love. Watermelon (although I really do mind the seeds and often go for the less tasty seedless), crenshaw and cantaloupe. I've heard crane are delicious, but not widely available. When melons are in season, I can't get enough! What are your favorites?

I'm in a rut and sick of the vodka-tonics, vodka-cranberries, beers... Every time I read Paul Clarke's articles on SE, most of the ingredients are foreign to me. (Sorry, Paul.) Any recommendations to expand my palate?

I've been wanting to try beets for a while, so I finally bought some golden beets at the grocery store. However, I've never cooked beets, and the only way I've ever had them was pickled (and I thought they were nasty). Any tips or suggestions?

Still icy & snowy where I live...uhh, thoughts of sunny warm days & sippin' on something cool to drink. Iced tea or an extra thick chocolate milkshake would be my first & second choices. Do your beverages choices change with the weather?

There's so many to choose from, but I know that I couldn't live without Mexican, Italian, Thai and Japanese. Mexican food feels like home to me, Italian food is ... well, it's just obvious. It's beautiful and delicious. Thai food is beyond words and Japanese food is like an art form. What's your favorite ethnic food and why? What are your favorite ethnic dishes?

I'm back in NYC for a couple of days, and would love to hear of any recent and much-enjoyed food-related finds you may have come across in the last few months... it seems as if things are changing even faster than usual, these days, and a lot of my old favourites are just GONE.

Favorite naughty snack.

There is a liquor store on my street which would be pretty horrendous if I was an alcoholic, but it's proving to be pretty horrendous despite my lack of alcohol enthusiasm. I eat pretty healthily, so on most days I allow myself a "treat." Said treat will sometimes be Mochi, that Japanese ice cream or a small handful of my favorite nuts or some cheese and crackers or whatever. Three or four times a week I find myself walking to the liquor store under the guise of buying something to drink, most days I make it out with just drinks. On some days, like earlier tonight, I walk out with a "treat" that I would never buy at a regular market. I guess it's because your choices are so limited when you're picking out a snack at a liquor store, but I was just wondering: When you're looking to eat a snack that's a little on the naughty side, what do you choose? I usually go for crunchy/salty/cheesy/savory things. In case anyone was wondering, I walked out of the liquor store tonight with a mini canister of Pringles Sour Cream & Onion chips. Gross? Maybe. Weirdly delicious? For sure.

If you were given a candy filled Easter basket as a child, what were your favorites? Chocolate eggs, jelly beans, those colored confection eggs (yuck), marshmallow choc. covered eggs, peanut butter filled....Least favorite? Did you go around the yard or house for an Easter Egg hunt for both real & candy eggs? Plastic eggs that are filled with candy or $ are kinda fun, too! Fancy-pants chocolate or cheapo, which candy would you like to find in an Easter basket this year?

Favorite Chocolate Bar

When you get hit with a craving for chocolate, what do you reach for? I reach for anything by Ritter Sport, particularly the dark or milk chocolate with whole hazelnuts or the alpine milk chocolate. Oh, or the chocolate covered biscuit. What about you? Do you reach for pure dark chocolate? Milk chocolate? Something with nuts? Or fruit? Or will anything do?

Favorite kitchen appliance?

What kitchen appliances do you love best?

Me, I love my Kitchenaid mixer. It kneads, it mixes, it grinds meat and stuffs sausages, and it makes ice cream. Among other things.

On the other hand, I've gone about 3 weeks now without a stove. The old one attempted to burn the house down (oven wouldn't shut off) so its been banished to the scrap heap. And so I went shopping. Decided that if I was going to get a new stove, I might as well replace the old vent hood with a microwave/convection oven/vent hood.

Considering that I usually bake bread a couple times a week, living without an oven has been difficult. And I'm getting a little tired of crockpots and other electrical devices for cooking. But the end is near.

After much electrical work, the microwave/convection oven/vent hood is now in place, and I just pulled a batch of cinnamon buns out. Mmmmmmm.... finally....home-baked goodies.

In a few days, the plumber will be along to run a gas pipe for the gas cooktop, and I may be back in full operation by the end of the week. The new stove may replace the Kitchenaid as a favorite, for a while. I look forward to being able to boil water for pasta, and to sear meat on a cast iron pan.

But then the Kitchenaid will probably win back my little electrical heart. Because once the weather heats up, most of the actual cooking moves to the outdoor grill.

So what appliances to you love? Which ones couldn't you live without?

What are your favorite sites to buy hard to find food?

There are certain foods I grew up with, or have grown to love, that are darned near impossible to find, at least without major hassle. So I've turned to internet ordering. It's seriously improved the quality of my life. Tomoe Ame and Umi candy are no longer a distant dream when I order from cybersnacks.net. Favorite Food Discoveries of 2007?

What new (and possibly slightly unusual) food did you try in 2007? Did you love it (or was it a little too weird)?
I'm currently on vacation skiing in Vermont, and tried a water buffalo yogurt (2%, vanilla) from Spoondance Creamery (in South Woodstock, VT) that was incredible! Tangier than normal vanilla yogurt (I usually just eat plain yogurt because sweetened yogurts taste like plain sugar to me) and very thick and creamy in an entirely natural, no gelatin added way, it was absolutely delicious! I'm definitely going to find this yogurt at home and add it to my grocery list!

My favorite lemon dessert is _____

After a few weeks of the holiday chocolate & caramel offerings, I'm craving a lemon dessert. Actually I have multi-favorites...lemon meringue pie, lemon-poppy seed cake, lemon cheesecake & lemon squares. Do any lemon desserts satisfy your sweet tooth?

So far, what's been your least favorite holiday food?

Since I was working today, the hospital provides us a "free" meal on Christmas. The mashed potatoes really triggered my ick button...ice-cream scoop shaped portion which was only slightly warm...identified as those instant variety! What holiday food or beverage didn't live up to your expectations? How did you politely (?) handle the situation?
