Dessert Denial: Bitter about Lack of Sweet Finish

Why do servers sometimes bring the check without inquiring about interest in dessert? A desire to turn the table? A misread of customer appetite? A malevolent disdain for arguably the most delightful part of the meal?

What is the best way to serve gelato?

So it's like this. I work for a coffee shop, in which we also sell gelato. Trouble is, we've all been well trained at making coffee, NOT at making gelato. further trouble is, there's not really any material with which to train, meaning that we're usually doing it wrong in some way, shape, form or fashion.
Anyway! so it's like this. our gelato is often rather stiff--really, really hard. we've got two regular ice cream scoops, and this random flat shovel thingy. (like I said, we're all coffee people, not gelato people; none of us have been trained in the serving of gelato). So, is there any way to better serve gelato so that it's soft and creamy and delicous, rather than stiff and hard?

Have you ever made Sticky Toffee Pudding?

Even the name Sticky Toffee Pudding assures me this would be a super-sweet-only-able-to-eat-a-small-portion-dessert! Mmm...I'd like to give it a try complete with the Sticky Toffee Sauce & a scoop of vanilla Haagen-Dazs. I've looked at recipes online...Epicurious & Food & Wine...but wanted to ask my SE buddies...anyone attempt STP? Any hints for assuring a perfect pudding? Have you eaten one at a restaurant?

Mario Batali's Bitter Chocolate Tart

This tart (recipe in Molto Mario) is a glorious, sophisticated tart with it's wonderful combination of bitter chocolate and anise. I have made it several times. One thing about it - and it detracts little - is that the crust shrinks a lot when baking. I have tried several things including letting the dough rest for a long time, making sure the unbaked shell is thoroughly cooled etc to little avail. I wonder what the experience is of others who've made this great dessert?

My favorite lemon dessert is _____

After a few weeks of the holiday chocolate & caramel offerings, I'm craving a lemon dessert. Actually I have multi-favorites...lemon meringue pie, lemon-poppy seed cake, lemon cheesecake & lemon squares. Do any lemon desserts satisfy your sweet tooth?

Christmas Eve Dessert - HELP!

I am in desperate need of a dessert idea for Christmas Eve. I am serving Spicy Shrimp (from the Pioneer Woman) for dinner (with crusty bread to soak up the lovely sauce) along with a cabbage salad of some variety (probably a take on an Asian slaw). The shrimp are rich, and I don't want a heavy dessert.....Ideas?

What to do...

I accidentally bought cottage cheese the other day and have no clue what to do with it, seeing as i also have an abundance of limes and chocolate wafer cookies i was thinking of making a chocolate/lime cheesecake. Does anyone have a good recipe for cottage cheesecake? (or any other suggestions as to what to do with cottage cheese, preferably dessert)
